Chicken Paprikas’ –  Csirkepaprikas’

Serves: 6                      Prep: 15 min.                          Cooking time: 45 min.                                                                                                                                  

4 tbsp. oil

1 medium onion, chopped                                                                             

1 tbsp. sweet paprika

1/2 tsp. black pepper

6 – 8 pieces of chicken (organic or hormone and antibiotic free)

1 c. water

1 whole roma tomato

slice of hot Hungarian pepper (optional)

1 tsp. salt

4-5 button mushrooms (optional)

½ c. sour cream

1 tbsp. of flour/cornstarch

Instructions:

  1. Warm oil in a medium size skillet, add onion and saute until transparent.
  2. Add paprika and black pepper and mix with the onions.
  3. Add chicken and brown all sides, if chicken is sticking to pan add a few drops of water.
  4. Once chicken is browned, add only ½ cup of water, tomato and hot pepper if you like things spicy. (optional)
  5. Season with salt and cover and simmer slowly until tender, approximately 45 minutes, stirring occasionally.
  6. While it’s cooking gradually add the remaining ½ cup of water, little at a time to form a consistent sauce.
  7. To avoid the sour cream separating, place the ½ cup into a small bowl, and add some of the sauce and blend with a wire whisk until smooth consistency. Turn the temperature up so the chicken is boiling and slowly add the sour cream mixture. Move the chicken to the sides of the skillet and mix well with the wire whisk.
  8. To thicken the sauce, prepare a tablespoon of flour/cornstarch with some water and add it to the chicken at this time while it’s still boiling. Once it thickens remove the skillet from the heat.  
  9. Serve with homemade dumplings and ENJOY!
