Baked Creole Garlic Butter Cod with Vegetables
This delicious baked cod is easy to make and ready in 15 minutes. The cod is topped with the creole seasoning, baked in a garlic butter sauce and served with vegetables.

- 2-6 oz wild cod fillets
- 2 tbsp unsalted butter, softened
- 2 clove garlic, minced
- 1 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1/2 lemon, sliced
- pinch of salt and pepper
Creole Seasoning: makes 1/4 cup
- 2 tsp dried basil
- 2 tsp dried oregano
- 1 tsp dried thyme
- 1 tbsp smoked paprika
- 2 tsp onion powder
- 2 tsp garlic powder
- 1/2 tsp cayenne
- 1/2 tsp black pepper
- 1 tsp Himalayan salt
Preheat oven to 400°F.
In a small bowl, combine the creole seasoning and set aside.
Mix in a small bowl, butter, garlic, olive oil, lemon juice, salt and pepper. Spread the mixture in a baking dish, and lay the cod on top.
Sprinkle and lightly pat the creole seasoning over the cod pieces, then add slices of lemon over each piece. Bake in the preheated oven for 15-20 minutes.
Serve immediately with a vegetable stir-fry, rice, roasted potatoes, steamed vegetables.
