Black Bean and Quinoa Salad

Ingredients

Salad

  • 1/2 cup quinoa (tri-colour)
  • 1 cup water
  • 1-14 oz can black beans
  • 1/2 red onion, diced
  • 1/2 red pepper, diced
  • 1/2 seedless cucumber, quartered
  • 1 cup red cabbage, shredded or finely sliced

Dressing

  • 1 garlic, minced
  • 2 tbsp apple cider vinegar
  • 2 tbsp extra virgin olive oil
  • 1 tsp honey
  • 1/4 tsp Himalayan salt
  • pepper
  • 1/4 cup feta, crumbled
  • 1/4 cup parsley
  • garnish with basil and mint.

Instructions

  • Rinse quinoa under cold water using a fine mesh strainer. Bring water to a boil, then add quinoa. Reduce heat and simmer for 15 minutes with lid on. Remove from stove with lid off, separate quinoa by using a fork to fluff the quinoa and allow to cool.
  • In a small bowl or jar, whisk together garlic, apple cider vinegar, olive oil, honey, salt and pepper. Set aside.
