Cajun Spicy Sausage and Shrimp Skillet Recipe

This vibrant one-pot recipe is a dinnertime favourite that is quick, and delicious. This dish has sweet and spicy flavors that comes together in this classic Cajun dish.

Ingredients
  

Cajun Seasoning: 1 tbsp
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cumin
  • ½ tsp oregano
  • ½ tsp thyme
  • ¼ tsp black pepper
  • Pinch of cayenne pepper
Remaining Ingredients:
  • 2 tbsp extra virgin olive oil
  • 8 oz spicy pork sausage, sliced
  • ½ onion, chopped
  • 2 cloves garlic, minced
  • 1 celery rib, diced
  • ½ orange bell pepper, sliced
  • ½ red bell pepper, sliced
  • 1 tbsp Cajun seasoning
  • 1 ½ cups chicken broth
  • 1 -14 oz roasted crunched tomatoes
  • 1 cup long grain rice
  • 8 oz shrimp
  • 1 green onions, sliced for garnishing
  • 2-3 tbsp parsley, chopped for garnishing

Equipment

  • 3-4 qt. (liter) heavy or cast iron pot

Method
 

  1. In a small bowl, whisk together paprika, garlic powder, onion powder, cumin, oregano, thyme, black pepper and cayenne pepper for the Cajun seasoning. Set aside
  2. In a large heavy pot, heat olive oil over medium heat, add sausage, and sauté for 2-3 minutes on each side. Transfer to a plate.
  3. Add onion and sauté for 2 minutes, then stir in celery and peppers, continue to sauté for about one minute, then add garlic and sauté for one more minute. Then add the Cajun seasoning and stir to coat the vegetables.
  4. Stir in the chicken broth, tomatoes, rice, and return the sausage back into the pot. Bring to a boil, then reduce the heat to simmer and cover. Cook for 15-20 minutes, stirring 2-3 times. Add shrimp and simmer with lid on for another 3 minutes until shrimp is pink and cooked.
  5. Garnish with green onions and parsley if desired.
