Coconut Oatmeal Cookie

This healthy cookie is sweeten with coconut and maple syrup that adds a tasty flavour to this crunchy chewy cookie.

Ingredients
  

  • 1 cup spelt flour (option all-purpose flour)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter
  • 1/2 cup coconut sugar (substitute 1/4 cup sugar and 1/4 cup brown sugar)
  • 1 egg
  • 1 tsp vanilla
  • 2 tbsp maple syrup (unpasteurized honey)
  • 11/4 cup rolled oats
  • 1 cup unsweetened shredded coconut
  • sunflower seeds, chai seeds, pumpkin seeds, chocolate chips (optional)

Method
 

  1. Mix together flour, baking soda, and salt in a medium bowl and set aside.   
  2. Beat butter in a large bowl until fluffy with an electric mixer. Add sugar and beat until well blended. Beat in egg,vanilla and maple syrup. 
  3. Stir in dry ingredients and mix until combined. Add flour, oats and coconut into the butter mixture. Mix until well combined. Now is the time to add any seeds, nuts or chocolate chips. Wrap dough and refrigerator for 30 minutes.
  4. Preheat oven to 350°F.
  5. Using an ice cream scooper or two tablespoons, drop onto a baking sheet lined with parchment paper. Space cookies 2 inches apart and flatten to 2 inch rounds.
  6. Bake cookies 12-15 minutes or until golden. Remove from oven and allow to cool on a wire rack.
