Method
- Mix the ingredients for the Aioli and set aside.
- In a flat bowl or dish, mix the flour with the seasonings.
- Take each chicken breast and cut them in half on a diagonal. Place the cut pieces between two layers of saran wrap and pound with a meat mallet or rolling pin to about 2.5 cm or 1 inch thickness. Dredge the chicken breast in the seasoned flour, shake off excess, and place in hot skillet over medium heat. Cook about 3-4 minutes on each side until crispy and flip.
- Transfer the chicken onto a baking dish and cover with foil and place in a 275°F oven until ready to assemble to keep it warm and retain the juiciness.
- Arrange the toppings and serve with sweet potato or white potato fries.
