Seasoning:
- 1/4 cup flour (any type will work)
- 1/2 tsp sweet paprika
- 1 tsp fresh rosemary, chopped
- 1/2 tsp garlic powder
- 1 tsp Himalayan salt
- 1/4 tsp black pepper
Burgers:
- 2 chicken breasts, each cut in half horizontally into 4 pieces
- 2 tbsp extra virgin olive oil
- lettuce
- red onion, thinly sliced
- tomato, sliced
- light creamy cabbage slaw (optional)
- 4 soft rolls (I made sweet potato buns for this recipe)
Aioli
- 1/2 cup mayonnaise
- 3 cloves garlic, minced
- 1 tsp lemon juice
- 1/4 tsp Dijon mustard (optional)
- pinch Himalayan salt
Mix the ingredients for the Aioli and set aside.
In a flat bowl or dish, mix the flour with the seasonings.
Take each chicken breast and cut them in half on a diagonal. Place the cut pieces between two layers of saran wrap and pound with a meat mallet or rolling pin to about 2.5 cm or 1 inch thickness. Dredge the chicken breast in the seasoned flour, shake off excess, and place in hot skillet over medium heat. Cook about 3-4 minutes on each side until crispy and flip.
Transfer the chicken onto a baking dish and cover with foil and place in a 275°F oven until ready to assemble to keep it warm and retain the juiciness.
Arrange the toppings and serve with sweet potato or white potato fries.
