Easy Chorizo Stew with Sweet Potato and Chickpeas

- 2 tbsp extra virgin olive oil
- 1 medium onion, chopped
- 4-6 links chorizo, sliced 1/2 inch wide
- 2 cloves garlic, minced
- 1 yellow/orange/red pepper, sliced
- 2 sweet potatoes, cubed
- 1-28 oz can diced tomatoes
- 1 tbsp tomato paste
- 1-15 oz can chickpeas, drained and rinsed
- 1 tsp dried oregano (fresh 2 tsp)
- 1 tsp dried thyme (fresh 2 tsp)
- 1 tsp sea salt
- 1 zucchini, cut into quarters
- garnish with parsley, cilantro, or sour cream
In a large skillet over medium heat, add olive oil, then add onion and sauté for about 3-5 minutes. Add sliced chorizo, and sauté until sausage is cooked through. Then add garlic and sauté for about 1 minute.
While stirring, add coloured pepper, and sweet potato. Cook for about 1 minute. Add diced tomatoes, tomato paste, chickpeas, salt, oregano and thyme. Simmer for about 20-25 minutes, partially covered, stirring occasionally. The last 10 minutes, add the zucchini and continue cooking without a lid until the sweet potatoes and zucchini have softened. The liquid will reduce and the sauce should have thicken.
Garnish with chopped parsley, cilantro, sour cream, cheese or your favourite toppings.
