Easy Garlic Chicken Breast with Homemade Tomato Herb Sauce

This dinner for two, scrumptious chicken dish is simmered in a delicious homemade garlic basil tomato sauce that can be eaten on it's own or with pasta.

Ingredients
  

  • 2 boneless, skinless chicken breasts (8 oz per chicken breast)
  • salt and pepper to season the chicken
  • 1 tbsp extra virgin olive oil
  • 1 tbsp unsalted butter
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 1/2 red bell pepper, sliced in strips
  • 1/2 yellow/orange pepper, sliced in strips
  • 14 oz homemade tomato sauce (substitute 14 oz can crushed tomatoes)
  • 2 tbsp tomato paste
  • 1 sprig of oregano (1 tsp of dried can be substituted)
  • 2 tbsp fresh basil leaves, sliced (1 tbsp of dried can be substituted)
  • 2 tbsp Parmesan cheese
  • 2 tbsp fresh parsley, chopped for garnishing
  • 2 tbsp fresh basil, sliced for garnishing

Equipment

  • cast iron skillet or heavy bottom skillet

Method
 

  1. Prepare a pasta of your choice, according to the instructions on the package if you decide to serve this dish with pasta.
  2. Season the chicken breasts with salt and pepper. Heat oil and butter in a heavy-bottom skillet or cast iron skillet. Add the chicken breasts and sauté over medium-high heat, for about 5 minutes on each side, turning over once the chicken is browned, and transfer to a plate.   
  3. Reduce heat, and add garlic, and shallots and sauté for about a minute. Then add peppers and sauté for a couple of minutes. Add the tomato sauce, tomato paste, and cook for 15 minutes. The last 5-7 minutes return chicken to the skillet and add the fresh oregano and basil.
  4. Grate Parmesan cheese over the chicken, and garnish with fresh parsley and basil. 
  5. Serve on it's own or with pasta.
