- Start by allowing the pork chops to sit at room temperature for 20 minutes. Pat to dry and season the pork chops with salt and pepper on both sides.
- Preheat oven to 400℉ (204℃).
- Heat the large skillet over medium to high temperature, add olive oil and 1/2 tablespoon butter. Once hot, add the pork chops and 2 sprigs of rosemary and sear the chops until golden brown about 3-4 minutes. Turn over and cook for another 2-3 minutes. Transfer to a baking dish.
- Add the remaining 1 tablespoon of butter, once melted add the garlic and once the garlic has released it's aroma, about 30 seconds to 1 minute, pour over the pork chops and add the tablespoon of rosemary. Transfer to the oven and bake for 10 minutes.
- Remove pork chops from oven and allow to rest for 5 minutes. Serve with mashed potatoes and maple caramelized apples.
