Easy Garlic Rosemary Pork Chops Under 30 Minutes

- 2 bone-in pork chops, 1" thickness (20 minutes room temperature)
- 1/2 tsp Himalayan salt
- 1/4 tsp pepper
- 1 tbsp extra virgin olive oil
- 1½ tbsp unsalted butter
- 1 tbsp garlic, minced
- 1 tbsp fresh rosemary, plus 2 sprigs
Start by allowing the pork chops to sit at room temperature for 20 minutes. Pat to dry and season the pork chops with salt and pepper on both sides.
Preheat oven to 400℉ (204℃).
Heat the large skillet over medium to high temperature, add olive oil and 1/2 tablespoon butter. Once hot, add the pork chops and 2 sprigs of rosemary and sear the chops until golden brown about 3-4 minutes. Turn over and cook for another 2-3 minutes. Transfer to a baking dish.
Add the remaining 1 tablespoon of butter, once melted add the garlic and once the garlic has released it's aroma, about 30 seconds to 1 minute, pour over the pork chops and add the tablespoon of rosemary. Transfer to the oven and bake for 10 minutes.
Remove pork chops from oven and allow to rest for 5 minutes. Serve with mashed potatoes and maple caramelized apples.
