Preheat oven to 400°F.
Mix together the fajita seasoning in a medium bowl, add the strips chicken breasts and 2 tablespoons of olive oil. Mix well to coat and set aside.
While chicken is marinading, prepare red and yellow peppers, and onion, and add to the sheet pan. Season with salt and pepper, and add the remainging 2 tablespoons of olive oil and toss to coat. Add the seasoned chicken strips, arranging them throughout the baking sheet so everything will cook evenly. Bake for 15-20 minutes until the chicken and vegetables are cooked and crispy.
Tortilla wraps: option are store-bought or make your own tortillas. For store-bought, place in foil in a warm oven for about 5-10 minutes or wrap them in paper towel and microwave for 20 seconds. For homemade, go to Homemade Tortilla recipe.
To arrange fajitas, add the roasted chicken, peppers and onion to each tortilla and add your favourite toppings. Garnish with cilantro or parsley and squeeze some lime over each. Serve warm and enjoy!
