Fresh Peach Crisp

This easy delicious peach crisp is made with fresh juicy peaches and spiced crunchy topping.

Ingredients
  

Filling:
  • 5 cups peaches, peeled, and sliced (8-10 medium peaches)
  • 1 tbsp lemon juice
  • 3 tbsp raw fine cane sugar
  • 2 tbsp arrowroot/tapicoa starch or cornstarch
Topping:
  • 1/2 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1/3 cup coconut/brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted

Equipment

  • 9 x 9 inch square baking dish (or 22.9 cm x 22.9 cm)

Method
 

  1. Preheat oven to 350°F.
  2. Filling: In a large bowl, stir together peaches with lemon juice, then mix in sugar and starch of your choice until evenly coated. Pour mixture into 9 x 9 inch baking dish, or a 9 inch pie dish.
  3. Topping: In a medium mixing bowl, stir together flour, rolled oats, brown or coconut sugar, cinnamon, nutmeg and salt until well blended. Stir in the melted butter until evenly moistened crumbs form. Spoon the topping mixture evenly over the filling.    
  4. Bake for about 30-40 minutes, until the topping is golden brown. Transfer to a wire rack and allow to cool for 10 minutes.
  5.  Serve warm with ice cream or whipped cream.
