Goat Cheese Crostini with Honey and Pomegranate

This easy crostini recipe with goat cheese, honey, pomegranate and chopped walnuts makes a perfect holiday appetizer.

Equipment

Ingredients

  • 1 1 baguette
  • 1/4 cup extra virgin olive oil
  • 4 oz goat cheese
  • 4 oz cream cheese
  • pinch of salt
  • 1/4 cup pomegranate seeds/arils
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup honey
  • 1-2 sprig of fresh rosemary

Instructions

  • Preheat oven to 350°F.  
  • Slice the baguette to ½ inch slices and arrange them on a baking sheet. Brush each slice with olive oil on both sides using a pastry brush. Bake for 15 minutes until golden, turning over halfway. Remove and cool on rack before assembling.
  • In a food processor, add goat cheese, cream cheese and salt. Pulse until well blended and creamy.
  • Once the crostini’s are cool, spread 1-2 tablespoon to each crostini, then add the pomegranates, chopped walnuts, and drizzle with honey. Serve warm.
