Goat Cheese Crostini with Honey and Pomegranate

- 1 1 baguette
- 1/4 cup extra virgin olive oil
- 4 oz goat cheese
- 4 oz cream cheese
- pinch of salt
- 1/4 cup pomegranate seeds/arils
- 1/4 cup chopped walnuts (optional)
- 1/4 cup honey
- 1-2 sprig of fresh rosemary
Preheat oven to 350°F.
Slice the baguette to ½ inch slices and arrange them on a baking sheet. Brush each slice with olive oil on both sides using a pastry brush. Bake for 15 minutes until golden, turning over halfway. Remove and cool on rack before assembling.
In a food processor, add goat cheese, cream cheese and salt. Pulse until well blended and creamy.
Once the crostini’s are cool, spread 1-2 tablespoon to each crostini, then add the pomegranates, chopped walnuts, and drizzle with honey. Serve warm.
