Method
- In a large bowl, combine veal, red onion, garlic, oregano, salt, black pepper, feta and olive oil. Mix the ingredients using your hands so the ingredients are well combined.
- Form the patties, using the burger buns as a guide. Place on a plate or flat surface and allow them to rest. You can easily do this ahead of time, by covering them and place in the refrigerator.
- Grill burgers over medium heat about 5-7 minutes on each side, turning to create a grill markings. Optional to cook them on an indoor grill, or a skillet or in the oven.
Tzatziki
- Grate cucumber and place in a sieve over a bowl to allow the juice to drip through.
- If you notice the yogurt needs draining, place in a cheesecloth and over a large sieve and allow the liquid to drain through. It all depends on too, what consistence you want, a thick texture would require draining the yogurt.
- Whisk together yogurt, garlic, lemon juice, and olive oil in a medium bowl.
- Drain and squeeze cucumber well. Then add and mix in with the yogurt mixture.
- Season with salt and pepper. Chill
- Tzatziki can be made the morning of or day before.
