Greek Burgers with Tzatziki

These simple burgers have all the Greek flavours you would enjoy and adding the tzatziki sauce brings it to the next level.

Ingredients
  

  • 1 lb (.45 kg) organic lean ground veal or beef
  • 2 tbsp red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp oregano
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/4 cup feta, crumbled
  • 1 tbsp extra virgin olive oil
  • 2 tbsp parsley, chopped
Tzatziki
  • 1 cup plain Greek yogurt
  • 1/2 English cucumber, seeded, finely grated
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp fresh lemon juice
  • salt and pepper

Method
 

  1. In a large bowl, combine veal, red onion, garlic, oregano, salt, black pepper, feta and olive oil. Mix the ingredients using your hands so the ingredients are well combined.    
  2. Form the patties, using the burger buns as a guide. Place on a plate or flat surface and allow them to rest. You can easily do this ahead of time, by covering them and place in the refrigerator.
  3. Grill burgers over medium heat about 5-7 minutes on each side, turning to create a grill markings. Optional to cook them on an indoor grill, or a skillet or in the oven.   
Tzatziki
  1. Grate cucumber and place in a sieve over a bowl to allow the juice to drip through.   
  2. If you notice the yogurt needs draining, place in a cheesecloth and over a large sieve and allow the liquid to drain through. It all depends on too, what consistence you want, a thick texture would require draining the yogurt.   
  3. Whisk together yogurt, garlic, lemon juice, and olive oil in a medium bowl.
  4. Drain and squeeze cucumber well. Then add and mix in with the yogurt mixture.
  5. Season with salt and pepper. Chill
  6. Tzatziki can be made the morning of or day before.
