Grilled Mediterranean Salmon Kabobs with Dill Tzatziki Sauce

Ingredients

Salmon Kabobs

  • 1 lb salmon fillet, skin removed
  • 1/2 lemon juice
  • 4 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp fresh rosemary, chopped extra for garnishing
  • 1/2 tsp Himalayan salt
  • 1/4 tsp pepper
  • zucchini, red onion and cherry tomatoes are options
  • homemade tzatziki sauce or bought

Instructions

  • In medium bowl, whisk together lemon juice, olive oil, garlic, oregano, ginger, rosemary, salt and pepper.
  • Remove the skin of the salmon with a sharp knife and discard. Cut the salmon into1 inch cubes. Add the cut salmon cubes to the marinade and stir gently until the salmon is well coated. Marinate for minimum of 30 minutes up to 2 hours.
  • Using a large bowl, toss and coat vegetables with olive oil, lemon juice, oregano, salt and pepper.
  • Heat the grill to 400-425℉, while grill is heating, arrange and thread the salmon and vegetables onto skewers. Lightly spray the grill and place on hot barbecue or indoor grill for approximately 8 minutes, 4 minutes on each side, turning once halfway.
  • Remove the salmon skewers from the grill. Serve with basmati rice, roasted lemon potatoes or salad. Enjoy!
