- 4-6" links garlic turkey sausage, cut into 1 inch pieces
- 1/2 red onion, cut into 1 inch pieces
- 1/2 red pepper, cut into 1 inch pieces
- 1/2 yellow pepper, cut into 1 inch pieces
- 12 cherry tomatoes
- 3 tbsp extra virgin olive oil
- 1 tsp oregano
- 1/2 tsp garlic powder
- salt and pepper
- 1/4 cup fresh parsely, chopped
If you are using wooden skewers, soak them in water for at least 15-20 minutes. Otherwise, preheat grill to medium-high heat.
In a medium bowl, add the cut vegetables, tomatoes,olive oil, oregano, garlic powder, salt and pepper. Toss until coated. Begin threading through alternating the vegetables and sausage.
Add to the hot grill, turning a couple of times, about 5-7 minutes of each side, until you notice the sausage starting to turn brown and vegetables are grilled.
Serve the kabobs with basmati rice, salad or roasted potatoes and garnish with parsley.
