Ingredients

  • Prepare ‘perfect pastry’ recipe (recipe on my blog)
  • 5 free-range large eggs
  • 1 cup heavy cream (or half or half cream)
  • 1/8 tsp nutmeg
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 shallot, chopped
  • 1 cup smoked ham, cut in cubes
  • 1/4 red pepper, finely chopped
  • 1 cup spinach, roughly chopped and steamed
  • 8 oz white cheddar cheese, grated

Equipment

  • 9 inch pie plate

Method

  1. Heat oven to 350°F.
  2. Roll out pastry dough and place into a 9 inch pie plate and create a decorative edge around the pie plate. Using a fork, prick holes on the bottom of the crust. This will help the pie crust from bubbling up and if it does, don't worry, it will relax once you take it out of the oven. Bake for 15 minutes.
  3. In a large bowl, beat eggs, cream, nutmeg, salt and pepper with a wire whisk. Then pour into the pre-baked pie crust.
  4. Scatter shallots, ham, red pepper, spinach, and grated cheese into the pie crust.
  5. Bake for 35-40 minutes or until knife inserted in center comes out clean. Let stand 15-20 minutes and then serve.
