Healthy Granola Snack Bars

9 x 9 inch square pan
- 2 cups organic quick oats
- 1/2 cup mixed nuts
- 1/2 cup roasted coconut
- 1/4 cup unsalted butter, cut-in
- 1/3 cup pure honey
- 1/4 cup coconut oil
- 3 tbsp pure maple syrup
- 1/2 cup dried cranberries
- 1/2 cup dark chocolate, chopped
- 1 tsp pure vanilla extract
- 1/2 tsp Himalayan salt
- 1/4 cup hemp seeds/chai seeds/flaxseeds
Line a 9” x 9” square baking pan with parchment or wax paper and set aside.
Lay oats, coconut and nuts on a baking sheet and place in a 350 °F oven for 8-10 minutes, stirring occasionally, just enough to get them toasty.
Meanwhile, in a large mixing bowl, measure and add the remaining ingredients.
Once oats, coconut and nuts are cooled, add to the mixing bowl and stir until well combined. Transfer to prepared baking pan and press down firmly.
Cover with wrap or seal lid and refrigerator until firm for up to 2-3 hours.
Cut into bars and enjoy!
