Healthy Granola Snack Bars

Chewy, crunchy, sweet but not too sweet and satisfying granola bar that makes a perfect snack anytime of the day.

Equipment

  • Baking sheet
  • 9 x 9 inch square pan

Ingredients

  • 2 cups organic quick oats
  • 1/2 cup mixed nuts
  • 1/2 cup roasted coconut
  • 1/4 cup unsalted butter, cut-in
  • 1/3 cup pure honey
  • 1/4 cup coconut oil
  • 3 tbsp pure maple syrup
  • 1/2 cup dried cranberries
  • 1/2 cup dark chocolate, chopped
  • 1 tsp pure vanilla extract
  • 1/2 tsp Himalayan salt
  • 1/4 cup hemp seeds/chai seeds/flaxseeds

Instructions

  • Line a 9” x 9” square baking pan with parchment or wax paper and set aside.
  • Lay oats, coconut and nuts on a baking sheet and place in a 350 °F oven for 8-10 minutes, stirring occasionally, just enough to get them toasty.
  • Meanwhile, in a large mixing bowl, measure and add the remaining ingredients.
  • Once oats, coconut and nuts are cooled, add to the mixing bowl and stir until well combined. Transfer to prepared baking pan and press down firmly.
  • Cover with wrap or seal lid and refrigerator until firm for up to 2-3 hours.
  • Cut into bars and enjoy!
