Healthy Peanut Butter Honey Oat Energy Bites

A no-bake snack bites that are soft, with some crunch and a yummy peanut butter flavour.

Ingredients
  

Peanut Butter Honey Oat Chocolate Cinnamon Bites:
  • 1 cup organic quick oats or old fashion-oats
  • 1/4 cup organic peanut butter
  • 1/4 cup Chrisopigi pure honey
  • 1/4 cup unsweetened shredded coconut
  • 2 tbsp ground flaxseed
  • pinch of salt
  • 1 tsp pure vanilla extract (optional)
  • 1/4 cup dark chocolate, small chunks
  • 1/4 cup organic dried wild blueberries and tart cherries, chopped
  • 1/2 tsp cinnamon
Peanut Butter Honey Oat Nut and Dried Fruit Bites:
  • 1 cup organic quick oats or old fashion-oats
  • 1/4 cup peanut butter
  • 1/4 cup Chrisopigi pure honey
  • 1/4 cup unsweetened shredded coconut
  • 2 tbsp ground flaxseed
  • pinch of salt
  • 1 tsp pure vanilla extract (optional)
  • 1/4 cup organic dried fruit, chopped (wild blueberries, tart cherries, cranberries)
  • 1/4 cup nuts, pecans, walnuts or hazelnuts

Method
 

  1. Set peanut butter out at room temperature for about 20 minutes so it has a chance to soften.
  2. For both recipes, in a medium bowl, add and mix all of the ingredients until they are completely combined. Cover bowl and place into the refrigerator for about an hour, until the mixtures are firm.
  3. Once you remove them from the refrigerator and they will be crumbly, use the warmth of your hands to bind the mixtures. You can add a few drops of almond, oat or coconut milk to help form them into balls. Use a ice cream scooper and shape dough into evenly size balls. Place on parchment paper or a glass dish and place into the refrigerator for another hour or until firm.
  4. Store snack bites into air-tight container and refrigerator. Stores in the refrigerator for up to 2 weeks, if they last that long or can freeze up to 3-4 months.
