- Heat olive oil in a Dutch oven or large pot over medium high heat, and add onion, garlic and red pepper. Sauté until tender, about 5-6 minutes.
- Add ground turkey, break meat apart and cook until it is no longer pink. Once the meat is cooked, stir in chili powder, cumin, oregano and salt, simmer for about 20-30 seconds.
- Stir in the diced tomatoes, chicken broth, black and kidney beans. Bring the chili to a boil, then reduce the heat to simmer, and cook for about 35-45 minutes, until the chili starts to thicken and the flavours come together. Before serving, check the seasoning and adjust if necessary.
- Garnish with sour cream, avocado, scallions, parsley, or cheddar cheese Serve with biscuits, crusty bread, buns or tortilla chips.

Chili is an excellent meal to freeze! Divide in single portions in zip-lock bags or containers, for a easy and quick lunch or weeknight dinner.
