Healthy Turkey Chili

This healthy Turkey Chili recipe is one of my favourite chili recipes. It is absolutely delicious, loaded with warm spices, vegetables and so nutritious! This hearty turkey chili is perfect for game night, family gathering or a cozy winter evening!

Ingredients
  

  • 2 tbsp extra virgin olive oil
  • 1 lb lean ground turkey
  • 1 medium onion, chopped
  • 4 cloves, minced
  • 1 red pepper, diced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1 1/2 tsp salt
  • 28 oz can diced tomatoes or crushed tomatoes
  • 1 cup organic chicken broth
  • 2 tbsp tomato paste
  • 1-15 oz organic can black beans, drained and rinsed
  • 1-15 oz organic can kidney beans, drained and rinsed
  • Garnish with sour cream, avocado, scallions, parsley, or cheddar cheese

Equipment

  • Dutch oven or large sauce pot

Method
 

  1. Heat olive oil in a Dutch oven or large pot over medium high heat, and add onion, garlic and red pepper. Sauté until tender, about 5-6 minutes.
  2. Add ground turkey, break meat apart and cook until it is no longer pink. Once the meat is cooked, stir in chili powder, cumin, oregano and salt, simmer for about 20-30 seconds.
  3. Stir in the diced tomatoes, chicken broth, black and kidney beans. Bring the chili to a boil, then reduce the heat to simmer, and cook for about 35-45 minutes, until the chili starts to thicken and the flavours come together. Before serving, check the seasoning and adjust if necessary.
  4. Garnish with sour cream, avocado, scallions, parsley, or cheddar cheese Serve with biscuits, crusty bread, buns or tortilla chips.

Notes

Chili is an excellent meal to freeze! Divide in single portions in zip-lock bags or containers, for a easy and quick lunch or weeknight dinner.
