Hungarian Caramelized Cabbage and Noodles with Bacon-Káposztás Tészta

A popular central European pasta dish is so flavourful with caramelized cabbage and onion when cooked with smoky bacon. An easy weekday dish that comes together your family will love!

Ingredients
  

  • 12 oz egg noodles or fettuccine
  • 1/2 tsp salt
  • 6 slices smoked butcher's bacon, cut 1/2 inch slices
  • 2 tbsp vegetable oil (if necessary)
  • 1 medium onion, sliced
  • 1 small head of green cabbage, cored and thinly sliced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • dill and scallions for garnishing

  • skillet or fry pan
  • sauce pot

Method
 

  1. Prepare a medium size pot for pasta, once boiled, add salt and pasta. Cook until al denta, drain and set aside.
  2. In a skillet or fry pan, over medium heat, cook sliced bacon until slightly crispy, remove and transfer to a plate.
  3. Add onion to skillet or fry pan, and sauté until transparent and when it starts to caramelize. Add a tablespoon or two of oil may need to be added if bacon was very lean.
  4. Add cabbage to skillet/fry pan and cover, stirring occasionally. Cook with lid on for 5-7 minutes, then remove lid and continue cooking until cabbage has soften, transparent, and caramelized. This takes approximately 10-12 minutes. Season with salt and pepper.
  5. Add the pasta, and bacon to the skillet/fry pan, and toss until well combined. Adjust seasoning at this time. Garnish with dill and scallions.
  6. Serve warm and enjoy!

Notes

Note: you can purchase smoked thick butchers bacon at a local butcher store or grocery stores at the meat counter.
