Hungarian-Style Baked Creamy Cauliflower with Bacon (Sült Karfiol Szalonna)

- 4 cups cauliflower, cut bite-size florets (1 medium head)
- 1 tbsp butter, melted
- 1/4 tsp salt
- 1/8 tsp pepper
- 2 bacon, cut into strips
- 1 shallots, finely chopped
- 1/4 cup organic 2-3% milk
- 1/2 cup sour cream
- 1 tsp flour
- 2 tbsp bread crumbs
- fresh dill for garnishing
Preheat oven to 400°F.
In a medium baking dish, add and stir together cauliflower florets, melted butter, salt and pepper. Bake for 25 minutes.
While the cauliflower is baking, pan fry the bacon until it starts to get crispy, and transfer to a plate. Add the shallots and sauté for about 3 minutes.
In a small bowl, combine milk, sour cream and flour until smooth and creamy.
After 25 minutes, remove baked cauliflower from the oven, and add shallots, bacon and milk mixture and gently stir to coat. Sprinkle the breadcrumbs over the cauliflower and bake for another 15 minutes until golden in colour.
Garnish with fresh dill. Serve with poultry, pork chops, roast beef or fish dish.
