Italian Sausage and Mushroom Pasta in a Marinara Sauce

This dish is so satisfying with lots of flavours and it can be made under 30 minutes.

Equipment

  • large skillet or cast iron pan
  • medium to large sauce pot

Ingredients

  • 1 tbsp extra virgin olive oil
  • 4-6" links of Italian sausage, casings removed
  • 6-8 cremini mushrooms, sliced
  • 1/2 red pepper, sliced
  • 1 tsp Himalayan salt
  • 1/2 tsp black pepper
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 8 oz. pasta (penne worked really well in this recipe)
  • 1 tsp Himalayan salt

Instructions

  • Fill a medium to large size sauce pot with water and bring water to a boil, add salt then add the pasta. Cook until al dente. Before you drain the pasta, reserve about 3 tablespoons to add to the skillet with the pasta.
  • Heat a large skillet at medium temperature and add olive oil. Once casings are removed from the sausage add to the skillet. Cook at medium heat for about 7 minutes until the sausage is cooked through.
  • Transfer the sausage onto a plate and set aside. There should be some fat reserved from the sausage, if not, then add another tablespoon of olive oil.
  • Add mushrooms and red pepper, sauté for about 5 minutes until the mushrooms are cooked. Add the sausage back into the skillet. Add homemade marinara sauce and stir until well blended.
  • Once the pasta is cooked, add to the skillet and 3-4 tablespoons of the boiling water into the skillet as well. Stir until the pasta is coated with the marinara sauce.
  • Sprinkle Parmesan cheese to your liking. Garnish with parsley and serve.
