Italian Sausage and Mushroom Pasta in a Marinara Sauce

- 1 tbsp extra virgin olive oil
- 4-6" links of Italian sausage, casings removed
- 6-8 cremini mushrooms, sliced
- 1/2 red pepper, sliced
- 1 tsp Himalayan salt
- 1/2 tsp black pepper
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 8 oz. pasta (penne worked really well in this recipe)
- 1 tsp Himalayan salt
Fill a medium to large size sauce pot with water and bring water to a boil, add salt then add the pasta. Cook until al dente. Before you drain the pasta, reserve about 3 tablespoons to add to the skillet with the pasta.
Heat a large skillet at medium temperature and add olive oil. Once casings are removed from the sausage add to the skillet. Cook at medium heat for about 7 minutes until the sausage is cooked through.
Transfer the sausage onto a plate and set aside. There should be some fat reserved from the sausage, if not, then add another tablespoon of olive oil.
Add mushrooms and red pepper, sauté for about 5 minutes until the mushrooms are cooked. Add the sausage back into the skillet. Add homemade marinara sauce and stir until well blended.
Once the pasta is cooked, add to the skillet and 3-4 tablespoons of the boiling water into the skillet as well. Stir until the pasta is coated with the marinara sauce.
Sprinkle Parmesan cheese to your liking. Garnish with parsley and serve.
