Maple Mashed Sweet Potatoes

This healthy and delicious sweet potato side dish is perfect for any holiday season.

Equipment

  • medium sauce pot

Ingredients

  • 1 1/2 sweet potatoes, peeled and cut into cubes (2 large)
  • 1 tsp Himalayan salt
  • 2 tbsp unsalted butter
  • 2 tbsp organic heavy cream (or half and half)
  • 1 tbsp fresh chopped parsley plus extra for garnishing
  • 1 tbsp pomegranate for garnishing
  • 2 tbsp maple syrup, extra for garnishing

Instructions

  • Peel and cut the sweet potatoes into 1 inch chunks and add them to a medium-large sauce pot and add enough water to cover the potatoes and add salt.        
  • Bring the pot to a boil, and then reduce heat to simmer with the lid partially on for about 15 minutes or until the potatoes are tender.
  • Drain the potatoes and leave in pot. Using an electric beater or hand masher, and start mashing. Add the butter, heavy cream, one tablespoon of parsley and maple syrup, and beat on medium-low to get a creamy texture. Season with salt and pepper.
  • Transfer to serving bowl. Garnish with the remaining parsley, pomegranate and drizzle the remaining maple syrup.
