Oatmeal Ice Cream Sandwich Cookies

This oatmeal cookie recipe makes a perfect ice cream sandwich. This delicious cookies has chewy centers with crunchy exterior.

Ingredients

  • 1 1/2 cups organic old-fashion oats
  • 3/4 cup organic all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, room temperature
  • 1/4 cup brown sugar, packed
  • 1/4 cup raw sugar
  • 1 large egg
  • 1/2 tsp pure vanilla extract

Instructions

  • Preheat to 350°F. Line a baking sheet with parchment paper.
  • Mix together the first 5 ingredients in a medium bowl.
  • Beat butter in a large bowl until fluffy with an electric mixer. Add both sugars; beat until well blended. Beat in egg and vanilla.
  • Stir in dry ingredients and mix until combined. Using an ice cream scooper or two tablespoons and drop scoops onto baking sheet, spacing cookies 3 inches apart and flatten to 2-inch rounds.
  • Bake cookies 12 minutes or until golden. Remove and allow to cool on a wire rack.
  • Once cooled, scoop vanilla ice cream or maple walnut and place in the center of the cookie and take another cookie and place on top and press gently.
