Oatmeal Ice Cream Sandwich Cookies
This oatmeal cookie recipe makes a perfect ice cream sandwich. This delicious cookies has chewy centers with crunchy exterior.

- 1 1/2 cups organic old-fashion oats
- 3/4 cup organic all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup unsalted butter, room temperature
- 1/4 cup brown sugar, packed
- 1/4 cup raw sugar
- 1 large egg
- 1/2 tsp pure vanilla extract
Preheat to 350°F. Line a baking sheet with parchment paper.
Mix together the first 5 ingredients in a medium bowl.
Beat butter in a large bowl until fluffy with an electric mixer. Add both sugars; beat until well blended. Beat in egg and vanilla.
Stir in dry ingredients and mix until combined. Using an ice cream scooper or two tablespoons and drop scoops onto baking sheet, spacing cookies 3 inches apart and flatten to 2-inch rounds.
Bake cookies 12 minutes or until golden. Remove and allow to cool on a wire rack.
Once cooled, scoop vanilla ice cream or maple walnut and place in the center of the cookie and take another cookie and place on top and press gently.
