One-Skillet Herb Chicken with Peaches

Ingredients
  

  • 1 lb boneless, skinless chicken thighs
  • 1 tsp sea salt
  • 1/4 tsp pepper
  • 1/2 tsp dried basil
  • 1/4 tsp dried oregano
  • 2 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 2 firm ripe peaches
  • 2 tbsp lemon juice
  • 2 tbsp honey
  • 1/4 cup fresh basil
  • 2 sprigs of thyme

Method
 

  1. Season chicken with salt, pepper, basil and oregano.
  2. Using a 12 inch skillet, over medium heat for a couple of minutes to heat through. Add 2 tablespoons of olive oil. Add the chicken thighs and pan-sear on each side without moving them for 5-6 minutes until golden. Flip the chicken thighs over to the other side and continue searing on a low-medium heat for 5 minutes or until cooked through. Transfer chicken to plate and set aside.
  3. Add butter to the skillet, and once melted, add sliced peaches and cook them for about 5 minutes, flipping them halfway through.
  4. Add honey and lemon juice, stirring until well blended. Place the chicken between the sliced peaches and simmer on low for 2-3 minutes, enough for the chicken to heat through and the honey to slightly thicken. Coat the chicken with the glaze.
  5. Garnish with fresh basil and thyme.
