Pesto Beans with Gnocchi

This delicious one-pan pesto dish is perfect weekday meal. The creamy beans are tender and coated in pesto with rich garlic flavour and fresh basil and lemon.

Ingredients
  

  • 3 tbsp extra virgin olive oil
  • 2 shallots, finely chopped
  • 3 garlic cloves, minced
  • 2 14 oz cans cannelini beans, rinsed and drained
  • cups vegetable stock
  • sea salt and pepper
  • 1 cup gnocchi
  • 1/4 cup Parmesan cheese, finely grated
  • 1/4 cup fresh pesto, homemade or store bought
  • 3 tbsp lemon juice
  • 8 basil, leaves for garnishing
  • red pepper flakes, optional

  • 1 medium-large skillet

Method
 

  1. Heat olive oil in a skillet and over medium heat, add shallots. Cook for 2-3 minutes, then add garlic and cook for one minute.
  2. Add beans and vegetable stock, bring to a low boil, then lower heat to simmer. Cook the beans for 4-5 minutes. Season with salt and pepper. Stirring occasionally, if stirred too often can break them.
  3. Add the gnocchi and cook for 3 minutes until it softens. Add the pesto, lemon juice and Parmesan cheese. Stir in fresh basil leaves for garnish and red pepper flakes if adding.
