Pineapple Mint Salsa

Ingredients
  

Makes: 2 1/2 cups
  • 2 cups pineapple, diced
  • 1/2 cup red pepper, diced
  • 4 tbsp shallot, finely chopped
  • 1 1/2 tbsp fresh mint, finely chopped
  • 1 tbsp apple cider vinegar
  • 2 tbsp honey

Method
 

  1. In a medium bowl, blend thoroughly together diced pineapple, red pepper, shallots, mint, apple cider vinegar and honey.
  2. Refrigerate until ready to serve. Allow a minimum of 2 hours before serving, or can be made the morning of serving this salsa to allow the flavours to blend.  
  3. Serve with grilled meats or fish as a side.
