Spaghetti Bolognese

Ingredients
  

  • 8 oz spaghetti pasta
  • 1/2 tsp salt
  • 3 tbsp pure extra virgin olive oil
  • 1 medium onion, chopped
  • 1 celery rib, diced
  • 1 carrot, diced
  • 3 cloves garlic, minced
  • 1 lb. ground beef (prefer hormone/antibiotic free)
  • 1-28 oz. can organic crushed tomatoes
  • 3 tbsp organic tomato paste
  • 1 tsp dried oregano
  • 1 tsp Himalayan salt
  • 1/2 tsp black pepper
  • pinch red pepper flakes
  • 1/2 cup Parmesan cheese, grated
  • 4-5 fresh basil leaves, chopped for garnishing

Method
 

  1. Bring a large sauce pot of water to a boil, add salt then add the pasta. Follow package instructions and cook until al dente and drain.
  2. Heat oil in a large skillet, add onion, celery, and carrots. Cook and stir until tender, about 5-7 minutes. Add garlic and sauté for another 2 minutes.
  3. Add the ground beef and breaking meat with a fork or spoon. Cook the beef until there is no pink visible, about 8 minutes.
  4. Add crushed tomatoes, tomato paste, oregano, salt, black pepper and pepper flakes. Simmer for 1 hour, allowing the sauce to thicken and flavours to blend. Add most of the parmesan cheese, leaving enough to garnish.
  5. Once the sauce has thicken, taste and adjust the seasoning at this time if needed.
  6. Garnish with Parmesan cheese and fresh basil.
