Method
- In a small bowl, whisk together Greek yogurt, apple cider vinegar, honey and salt. Set aside.
- Heat grill to medium-high heat, add the slices of peaches and grill for 2 minutes on each side. Remove and set aside.
- Arrange spinach, arugula, sliced peaches, tomatoes, radishes, cherry tomatoes, red onion, basil and pecans on a large serving plate. Drizzle the yogurt dressing off the side, and serve.
- Serve with grilled meats, poultry, fish or enjoy it as a light lunch salad.
