Whole Grain Chicken Pesto Sandwich
This sandwich couldn't get any better with the fresh pesto.

- 2 whole grain flat buns
- 1/4 cucumber, thinly sliced
- few slices red onion, thinly sliced
- 1/2 red pepper, thinly sliced
- 4 romaine lettuce leaves
- 1 chicken breast, cooked and sliced
Cook or grill chicken breast, once cooled, slice evenly for sandwich.
Slice and prepare vegetables and set aside. Mix together mayo and homemade pesto.
Assemble sandwich, by spreading pesto on buns and add vegetables. I found by adding another layer of pesto next to the chicken, it helped to keep everything in place.
Slice sandwich diagonally, and add a salad or potato chips as a side.
