Whole Grain Chicken Pesto Sandwich

This sandwich couldn't get any better with the fresh pesto.

Ingredients

  • 2 whole grain flat buns
  • 1/4 cucumber, thinly sliced
  • few slices red onion, thinly sliced
  • 1/2 red pepper, thinly sliced
  • 4 romaine lettuce leaves
  • 1 chicken breast, cooked and sliced

Instructions

  • Cook or grill chicken breast, once cooled, slice evenly for sandwich.
  • Slice and prepare vegetables and set aside. Mix together mayo and homemade pesto.
  • Assemble sandwich, by spreading pesto on buns and add vegetables. I found by adding another layer of pesto next to the chicken, it helped to keep everything in place.
  • Slice sandwich diagonally, and add a salad or potato chips as a side.
