A perfect holiday appetizer with lots of festive flavour your guests will love! Garnish with fresh thyme and serve with champagne.
While the holidays can be so busy with family and friends, it’s time to think of what you will serve for New Year’s Eve. With only a few ingredients and store-bought puff pastry you can prepare an appetizer ahead of time and impressed your guests at the same time, now who doesn’t love that! Your guests will think you spent all day in kitchen.
I highly recommend to have puff pastry in your freeze for times like this. The best part of making this tart is you most likely have all of the ingredients in your refrigerator. I will give you a few substitutions that will be helpful.

HOW TO MAKE THESE DELICIOUS TARTS
Unfold and gently roll out one sheet of puff pastry on a lightly flour surface. Using a 3 inch round cookie cutter or top of a glass and cut circles and place on a baking sheet lined with parchment paper. Discard the scrapes. Refrigerate until ready to use.
Using a large skillet, over medium heat, add olive oil and onions, cook for 25 minutes until they are softened, golden in colour and starting to caramelize. Season with a pinch of salt and pepper. Transfer to a plate. Using the same skillet, sauté the bacon until almost crispy. Remove from heat and set aside.
Preheat oven 400℉. Remove the puff pastry from the refrigerator. Using a sharp knife, score a 1/4 inch wide border around each pastry circle. Poke holes with a fork at the center of each tart. Add a tablespoon of onion mixture at the center of each tart, a slice of bacon and crumble goat cheese. Brush with egg wash over the edges and bake for 20-25 minutes until pastry is lightly golden. Serve hot or warm.
While I was making these I had some cranberry sauce leftover at Christmas and made a couple with brie and rosemary. A great option if you happen to have any leftover cranberry sauce from the holidays.
STORING
As I mentioned, making these appetizers ahead of time can be a huge relief when you have 101 other things going on. Simply, store them in the refrigerator in a container with a lid. Try to avoid laying them on top of one another but if you do, place wax paper or parchment paper between the layers.
To reheat these tarts, preheat oven to 350℉ and place tarts on a baking sheet and warm for 10 minutes.
Bacon, Caramelized Onion with Goat Cheese and Pomegranate Tarts

- 2 tbsp extra virgin olive oil
- 1 large onion, thinly sliced
- salt and pepper
- 2 slices of bacon, cut 1" slices
- 4 oz goat cheese, crumbled
- 1 egg, beaten
- 3-4 sprigs fresh thyme
- pomegranates, garnishing

- Serve warm and garnish with fresh thyme, rosemary if desired and pomegranates. Enjoy!

Do the pomegranates get added before or after you cook the tarts? They seem to have been left off the recipe.
