These flaky soft scones are sweetened with bananas and maple syrup. They are a perfect scone to start your day with or enjoy them in the afternoon with a spiced tea.
During the winter months when you don’t have fresh local fruit, you either resort to frozen, or any fruit you may have preserved during the summer months. Then you bake with bananas, and in this case, these delicious, soft, flaky scones were created and they are naturally sweetened with bananas, maple syrup and spiced with cinnamon, and cloves. Walnuts were added for crunch and that’s what makes them sooooo good!
Enjoy these yummy banana scones fresh out of the oven, or in this case, add the maple glaze for extra sweetness. I froze over half of the scones and enjoying them weeks after I made them. The beauty of making extra, you can enjoy them later. 🙂
Ingredients needed for this recipe
Dry Ingredients: I used all-purpose flour, light spelt flour or a combination of both, and the results are the same; baking powder acts a leavening agent and salt is required to preserve and flavour
Spices: cinnamon and nutmeg adds a pungent flavour and compliments nicely with banana and maple syrup
Butter: the cold the better as cold butter is needed to creates a flaky result
Bananas: important to have ripe bananas for flavour and sweetness
Milk: there are options, and either one will work for this recipe
Maple syrup: is a natural sweetness that I like to substitute for sugar
Pure vanilla extract: adds a hint of vanilla flavour
Walnuts: love to add walnuts whenever I can, for the crunch and flavour
Banana Walnut Scones with Maple Glaze

- 1 cup organic all-purpose flour
- 1 cup organic light spelt flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp Himalayan salt
- 1/3 cup cold unsalted butter
- 3/4 cup ripe bananas, mashed (2 bananas)
- 1/4 cup milk/almond/coconut milk
- 2 tbsp maple syrup
- 1 tsp pure vanilla extract
- 1/2 cup walnuts, chopped plus a few for topping
Glaze:
- 3/4 cup powdered sugar
- 1 tbsp milk
- 2 tbsp maple syrup
- pinch of salt
Instructions
- Preheat oven to 425°F.
- In a medium bowl, combine flours, baking powder, cinnamon, nutmeg and salt with a wooden spoon. With a fork or pastry cutter, cut the butter into the dry ingredients until it becomes crumbly.
- In a liquid measuring cup, add bananas, then add milk until it reaches 1 cup, then add maple syrup and vanilla extract and mix until well combined.
- Pour the banana mixture into the flour mixture and mix together with a wooden spoon until all of the ingredients are combined. Then fold in the walnuts.
- Dust counter top with flour, then add the dough, and using your hands, spread and shape the dough out into a circle, about 1 inch in thickness. You may need to add some flour to your hands to avoid the dough from sticking. Sprinkle the extra walnuts, and gently press them into the dough. Using a chef’s knife, cut the circle into 8 equal slices. Carefully separate slices, and place on a baking sheet covered with parchment paper. Bake for 15-18 minutes, or until golden in colour. Remove from oven and place on a cooling rack. Once the scones have cooled down, remove from pan and place on cooling rack.
- Glaze: Prepare maple glaze by adding the ingredients into a medium bowl, mix well with a whisk until all of the lumps are gone. Drizzle the glaze over the scones.
Nutrition
Combine the dry ingredients in a medium bowl, and then add the wet ingredients into the dry and stir together with a wooden spoon. The dough will be a little sticky, so add some flour to your hands and on the counter surface before shaping the dough.
I use my hands to spread and shape the dough into a circle about 1 inch thickness. If the dough tends to stick to your hands or counter, add a little more flour. When adding the chopped walnuts, gently press them into the dough before cutting. As well, when using a knife to cut the scones, coat the knife with flour to get clean cuts.
What I really like about these scones is there appearance. They look rustic and simply put, they are not perfect in shape. If you prefer a round scone, this recipe would give the best results.
Combine the glaze with a whisk to remove all of the lumps. Using a spoon, drizzle it over the scones once they are cooled. Happy eating and enjoy!
