Helpful tip:
- If you are not a fan of mushrooms, you can always substitute it with beans, zucchini, eggplant, potatoes or cauliflower.

Chicken with a Creamy Mushroom and Spinach Sauce

- 3 tbsp extra virgin olive oil
- 6-8 chicken thighs or 4 chicken breasts
- salt and pepper to season chicken
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 8 oz cremini mushrooms, sliced
- 8 oz organic spinach
- 1/3 cup chicken broth
- 1 cup heavy cream or half and half cream
- 1/2 cup Parmesan cheese, grated
- 4 tbsp sun-dried tomatoes, chopped
- 1 tsp Himalayan salt
- black pepper, salt and paprika, to season
- 8 oz pasta, (optional)
Instructions
- In a deep skillet, add oil and fry chicken pieces until cooked, about 5 minutes on each side, until golden in colour on each side and no longer pink in the center. Once cooked, remove and set aside covered.
- You may need to add an extra tablespoon or two of olive oil. Saute onion, garlic and mushrooms for about 3 minutes, until tender. Add spinach and saute until it starts to wilt.
- Stir in chicken broth and heavy cream. Bring to a low boil, once you see the sauce thickens, lower heat to a simmer.
- Add Parmesan cheese, sun-dried tomatoes, salt, pepper, and paprika.
- Add chicken back into the sauce, and simmer for a few minutes until chicken has heated through.
- Serve with pasta or salad.
