This hearty and delicious Black Bean Turkey and Chorizo Chili is loaded with flavours and spiced to perfection. It’s high in protein which makes this dish so satisfying during those cold winter days.
Once the colder weather sets in, we look for meals that are comforting and satisfying. Chili is one of those dishes that we turn to, and it is one of those recipes that we can really be creative and make it our own. This particular recipe I looked at what I had in my freezer and pantry, and this is how this recipe was created. This easy one-pot meal is full of flavour and goodness, it’s hearty, satisfying and so delicious.
You can’t go wrong with a great tasting chili. Start with your chili spices, cumin and chili powder, then you decide on your proteins, vegetables and other spices and herbs you want to add. What flavours are you striving for? Your likes and dislikes, taking into consideration your family, allergies and food sensitives.
I like to make my chili’s, stews, and sauces early in the day so all the flavours has a chance to release the goodness that is added, and this allows the flavours to come together to it’s fullness. If you think about those times we eat leftover spaghetti sauce or a stew and say how much more flavourful it was the next day and if not, then think about it the next time you have leftovers, you will notice the difference, they are much more bold in flavour.
Ingredients added to this recipe that makes it so delicious:
Extra virgin olive oil: Chrisopigi is my go-to evoo for is incredible flavour and richness!
Turkey: I used lean white meat of the turkey for this recipe. White meat still has the turkey flavour, but I wanted a leaner meat for this recipe since I was including the chorizo sausage that has much more bolder flavour, and higher in fat.
Chorizo sausage: this sausage is full of flavour and spice; perfect to add to this recipe.
Onion and garlic: they are both a good base for this chili, each have their own pungent flavours.
Chili powder: to apt up the spiciness to this recipe, and a must for any chili
Cumin: is rich and hearty in flavour, and goes hand in hand with chili powder
Oregano: is another hearty pungent ingredient to add. This herb is versatile and adds an earthy flavour
Seasonings: salt and pepper are must to enhance the flavours
Tomatoes: I used fire-roasted diced tomatoes for this recipe, however I have used crushed tomatoes as well, either work perfectly
Chicken broth: for added liquid and flavour, it will thicken as it cooks; water can be substituted
Black beans: I decided to add black beans only to this recipe, since there were two types of proteins added and keeping in mind the food sensitives. I also chose black beans for nutritional purposes. They are high in protein and fiber and helps to reduce many serious health conditions, such as lowers blood pressure, aids in digestion, wards off heart disease and manages diabetes to name a few
Coloured Pepper: added for sweetness and colour
Carrots: are a perfect addition for sweetness and colour
Corn: is optional, however, I would recommend it, it adds a yummy sweetness and try to use organic if all possible to avoid the pesticides
Parsley: is my go to herb, for colour and mainly for flavour as my family is not a fan of cilantro; however feel free to substitute
When making this delicious chili recipe:
Meat: sauté turkey and chorizo meat, then drain any fat from the meat after it’s been sauté, and purchase lean turkey.
Beans: when using canned beans, always drain and rinse the beans to remove the any starch or salt that has been added.
Spices: for this recipe, once the spices are added, sauté them for about one minute, this helps to release their flavours.
Vegetables: I chose red pepper and carrots to add to this chili for their own distinct flavour and sweetness, however, feel free to add other vegetables that will hold up for an hour and half of cooking time.

Ingredients
- 2 tbsp Chrisopigi extra virgin olive oil
- 1 lb lean ground turkey
- 8 oz chorizo sausage, sliced or casings removed
- 1 medium onion, chopped
- 3 cloves, minced
- 1 tbsp chili powder
- 1/2 tsp cumin
- 1 tsp dried oregano
- 1 1/2 tsp salt
- 1/4 tsp black pepper
- 1-15 oz can organic diced tomatoes or crushed tomatoes
- 1 1/2 cups organic chicken broth
- 1-15 oz organic can black beans, drained and rinsed
- 1 coloured pepper, diced
- 1-2 organic carrots, diced
- 1/2 cup organic frozen corn
- Garnish with sour cream, avocado, scallions, parsley, or cheddar cheese
Instructions
- Heat olive oil in a large saucepot over medium heat, and add onion and garlic, sauté until tender. Then add ground turkey, and chorizo sausage, and while it’s cooking, break the larger pieces. Once the meat is cooked, stir in chili powder, cumin, oregano, salt and pepper.
- Stir in the diced tomatoes, chicken broth, black beans, red pepper and carrots. Bring the chili to a slow boil, then reduce the heat to simmer, and cook for about 1 ½ hours, partially covered, stirring occasionally. Remove the cover for the last 30-40 minutes to allow the chili to thicken. Before serving, check the seasoning and adjust if necessary.
- Garnish with sour cream, avocado, scallions, parsley, or cheddar cheese Serve with biscuits, crusty bread, buns or tortilla chips.

How to make this recipe:
Cooking the meat: Remove the casings from the chorizo sausage, and begin cooking both sausage and the ground turkey, until they are not longer pink. Then transfer the meat using a slotted spoon to a plate and set aside. Then add the onions, and sauté for about 4 minutes, then add garlic, and coloured pepper, and sauté for about 1 minute. Then the spices, oregano, and seasonings are added.
Adding ingredients: Once the spices have been added and sauté for about 1 minute, then add your crushed tomatoes, black beans, and carrots, then reduce heat and simmer for 1 1/2 hours. Once the chili has been simmering for almost 2 hours, the sauce has thickened, and all of the goodness added is now ready to eat, or as I mentioned, allow it to sit for a few hours, and you will see the difference in flavour.
