Ingredients you will need for these squares
Flour: all purpose was used for this recipe, however spelt or whole wheat are options
Oats: rolled oats work best for these squares
Brown sugar: adds flavour and some moisture, and there is always options to add more or less
Cinnamon and Cloves: both are flavourful pungent spices that makes these squares so yummy!
Salt: add just a little bit to add flavour to this square
Butter: a tasty fat needed to give this square the crunchy texture
Blackberry jam: adds a delicious tart yet sweet yumminess
Blackberry Oat Crunchy Squares

- 11/2 cup cup all-purpose flour
- 11/2 cup old-fashion rolled oats
- 2/3 cup brown sugar
- 11/2 tsp cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp Himalayan salt
- 1 cup cold unsalted butter, cut into pieces
- 1 cup blackberry jam
Instructions
- Preheat oven to 325°F. Grease a 9 inch square baking pan or line with parchment paper.
- In a large bowl, stir together flour, rolled oats, brown sugar, cinnamon, cloves and salt. Using a fork, or pastry blender, cut in cold butter into the dry ingredients until the mixture forms coarse crumbs the size of small peas.
- Option: In a food processor, combine flour, rolled oats, brown sugar, cinnamon, cloves and salt. Add the butter and pulse 8-10 times until mixture forms coarse crumbs the size of small peas.
- Remove 2 cups of the crumb mixture and set aside. Press the remaining mixture into the bottom of the baking pan and about 1 inch up the sides.
- Scoop the blackberry jam evenly over the crust and spread carefully with the back of the spoon to cover the crust. Sprinkle evenly the 2 cups of crumb mixture that was set aside over the jam layer.
- Bake for 50 minutes, and until the top is light golden brown. Transfer to a cooling rack and let cool until firm, about 2 hours. Using a sharp knife, cut 25 squares.
- Serve warm with ice cream. Store in container at room temperature for up to 3 days.

Combine the dry ingredients together in a large bowl, and then add the butter. Using either a pastry blender or fork, cut in the butter into the dry ingredients until the mixture forms coarse crumbs that are the size of small peas. Then measure 2 cups and press into the bottom of the prepare bake pan. Then add dollops of the blackberry jam on top, and carefully spread an even layer to cover the base.


Now add the remaining crumb mixture to cover the jam layer and bake at 325°F for about 50 minutes, until you see the crumbed topping turning a light golden brown in colour. Set the pan on a cooling rack for 1-2 hours to cool until firm. Use a sharp knife and cut the squares.
