This healthy vegan soup is so creamy and luxurious in texture that doesn’t require adding any dairy. It is flavoured with onion, and garlic with a spicy zest of ginger. It is makes a lovely appetizer before a meal or a satisfying lunch with homemade garlic croutons and garnishing with fresh dill.
If you are like me who always has an abundance of carrots sitting in the refrigerator, this soup is definitely worth making. It is such a lovely, and delicious soup that has a creamy texture all on it’s own. Carrots have this lovely sweet flavour and the ginger adds a kick to this soup but just the right amount to not overpower the soup.

Ingredients and Helpful Tips:
Onion: sauté them long enough so they are transparent, as it allows some additional sweetness to the soup
Garlic: a pungent yet a flavourful vegetable that brings dishes to the next level of tastiness
Ginger: another pungent zesty spice that adds a warmth to the soup
Carrots: makes a wonderful flavourful soup, that creates a creamy texture without adding any diary. The flavour is earthy and sweet, that makes it a perfect comfort soup
Dill: it adds a delicious fresh citrus-like flavour to dishes, similar to celery and fennel. Dill and carrots compliment each other really well in this soup. Feel free to chop some dill into the soup as well.

This Carrot Ginger soup is a healthy nutritious soup! Carrots is the only vegetable that won’t lose it’s nutrient content when cooked. It is high source of Vitamin A, which helps to keep eyes healthy. Helps to fight cancer, and heart disease. Ginger is an anti-inflammatory which is helpful to those with arthirtis, helps with upset stomach and reduces cancer risks. Garlic and onions are also very healthy for us, as they will improve our immune system.
Carrot Ginger Soup with Dill

Ingredients
- 2 tbsp extra virgin olive oil
- 1 medium onion, coarsely chopped
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, minced (1/4 tsp powdered ginger)
- 1 1/4 lb organic carrots, sliced (6-8 medium carrots)
- 4 cups organic vegetable broth
- 1 tsp Himalayan salt
- 1/4 tsp white pepper
- 4 sprigs fresh dill, garnishing (option to add to soup as well)
- 1 ciabatta, sliced
Instructions
- In a medium saucepan over medium heat, add oil. Once oil is heated, add onion and sauté for 5 minutes until softened, then add garlic and ginger and sauté for 1 minute. Add carrots, and sauté for 5 minutes.
- Add vegetable broth, and bring to a boil, then reduce heat and simmer uncovered for about 20-30 minutes until carrots are tender.
- Transfer in batches to food processor/blender or use a hand emulsifier and puree until smooth. Add salt and white pepper.
- Serve hot and garnish with toasted ciabatta bread and dill.

How to make this recipe:
Once the onions are cooked and tender, then after the garlic and ginger have been added, then add carrots. Sauté carrots for about 5 minutes, this will allow some of the sweetness from the carrots to release. At that point, add the vegetable broth, and simmer the soup for 20-30 until the carrots are tender.
At that point, transfer the soup over to a food processor, blender or hand emulsifier and puree the soup until it’s smooth and creamy. Add the salt and pepper to taste to your preference. This soup does not need any cream or dairy for that matter. It has a rich, and creamy texture that you swear it had some type of cream in this soup.
Garnish the soup with homemade croutons using a ciabatta bread. Butter each side and sprinkle ground garlic on the top half of the sliced ciabatta bread. Place in the oven for 5-10 minutes on broil, turning halfway to toast both sides. Garnish with fresh dill. If all possible, don’t substitute dill, it adds such a fragrant flavour to the soup.
