Chicken in a Creamy Mushroom and Spinach Sauce

This rich comfort food is definitely a crowd pleaser and would satisfy anyone’s appetite. It offers this creamy garlic mushroom sauce that adds a rich bold flavour. Keeping it simple with a side pasta or rice or simple salad. Let the dish speak for itself as it has enough flavour all on it’s own. 

Helpful tip:

  • If you are not a fan of mushrooms, you can always substitute it with beans, zucchini, eggplant, potatoes or cauliflower. 
  • To be honest with you, most cooking recipes, you can always substitute ingredients. But you have to take into consideration the outcome of the flavours, and sometimes the texture. It will or may change slightly or significantly. 
  • In this case,  the mushrooms adds an earthy rustic flavour. If you decide to substitute the mushrooms, add additional garlic, and sun-dried tomatoes.

Ingredients
  

  • 3 tbsp extra virgin olive oil
  • 6-8 chicken thighs or 4 chicken breasts
  • salt and pepper to season chicken
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz cremini mushrooms, sliced
  • 8 oz organic spinach
  • 1/3 cup chicken broth
  • 1 cup heavy cream or half and half cream
  • 1/2 cup Parmesan cheese, grated
  • 4 tbsp sun-dried tomatoes, chopped
  • 1 tsp Himalayan salt
  • black pepper, salt and paprika, to season
  • 8 oz pasta, (optional)

Instructions
 

  • In a deep skillet, add oil and fry chicken pieces until cooked, about 5 minutes on each side, until golden in colour on each side and no longer pink in the center. Once cooked, remove and set aside covered.     
  • You may need to add an extra tablespoon or two of olive oil. Saute onion, garlic and mushrooms for about 3 minutes, until tender. Add spinach and saute until it starts to wilt.
  • Stir in chicken broth and heavy cream. Bring to a low boil, once you see the sauce thickens, lower heat to a simmer.
  • Add Parmesan cheese, sun-dried tomatoes, salt, pepper, and paprika.
  • Add chicken back into the sauce, and simmer for a few minutes until chicken has heated through.
  • Serve with pasta or salad.

Saute the onion, garlic, and mushrooms until tender. When adding spinach, once it has soften and wilted, then add your chicken broth, and heavy cream. Important to bring this to a boil to begin the thickening process. 

This dish has a creamy luxurious texture with bold flavours of mushrooms, parmesan cheese and sun-dried tomatoes that has you think of comfort food with each bite. If you prefer to go dairy free, it can be easily substituted with coconut milk and nutritional yeast. 

When serving this dish, there are two options, one is serving it with egg noodles or pasta and the other is basmati rice. This dish is satisfying enough to add a simple salad and crusty bread with it as well.
