Grilled Mediterranean Chicken Breast

Grilled chicken can add so much flavour to a dish, and this Mediterranean-style recipe is so delicious and the chicken is so tender that it has you making this recipe over and over again. I will add many variations of sides that seems to work so well with this chicken recipe. Also, I have made this chicken recipe into kabobs with tzatziki, Greek salad and potatoes. I posted these recipes on my blog, and it is one of my favourites.   

Helpful Tips:

  • Marinating the chicken for a minimum of 3 hours will add not only more flavour but it tenderizing the chicken as well. 
  • Important not to over grill the chicken or any meat for that matter. It will dry it out, and make the meat or poultry tough.
  • Important to add quality extra virgin olive oil to any recipe to improve the flavour. Always look for extra virgin cold pressed to get the quality you want in an olive oil.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1/2 cup extra virgin olive oil
  • 1/4 cup white balsamic vinegar
  • 1/4 cup fresh lemon juice
  • 3 clove garlic, mined
  • 1 tsp fresh or dry oregano
  • 1 tsp fresh thyme
  • 1 tsp salt

Instructions
 

  • Prepare marinated in a measuring cup and whisk together.    
  • Place marinate in a medium bowl, or an opened zip-lock bag inside a medium bowl, and place the chicken breasts inside the bag. Pour the whisked marinated over the chicken breasts and place in the refrigerator for a minimum of 3 hours, the longer the better as the chicken will tenderize and absorb the flavours of the marinated.
  • Remove chicken breasts from refrigerator and allow to sit at room temperature for about 15 minutes before placing on hot grill.    
  • Grill each side approximately 7-10 minutes depending on the side of the chicken breast.
  • Once cooked, remove and allow to rest for 5 minutes before slicing.     
  • Enjoy the sliced chicken breast alongside the Summer Strawberry Avocado Salad with dressing.

When marinating the chicken, add it to a medium bowl, or if you happen to be preparing 4 or more breasts, place the chicken with the marinate into a large zip-log bag. Grill the chicken about 10 minutes on each side. 

The chicken is so tender and moist so make sure you use a sharp knife when slicing the chicken breast. 

Options: One of the options, is to enjoy this Grilled Mediterranean Chicken with homemade potato salad and local asparagus.
