A simple chicken recipe that can elevate a summer dish! The chicken is marinated creating this super tender and delicious chicken breast! Only takes 20 minutes and add your favourite vegetables or a salad for a perfect weekday meal!
When it comes to cooking a chicken breast, sometimes we think it will turn out dry and chewy. It matters how we prepare the chicken breast and how long we cook it.
When creating a juicy and tender result, it only takes a few ingredients to marinate whether it is chicken breasts or other types of meat, and chicken breast is no exception! There is so much flavour to this dish and this Mediterranean-style recipe is so delicious and the chicken is so tender that it has you making this recipe over and over again! I will add many variations of sides that seems to work so well with this chicken recipe. Also, I have made this chicken recipe into kabobs with tzatziki, Greek salad and potatoes. HELPFUL TIPS
- Marinating the chicken for a minimum of 3 hours will add not only more flavour but it tenderizing the chicken as well.
- Important not to over grill the chicken or any meat for that matter. It will dry it out, and make the meat or poultry tough and chewy.
- Important to add good quality extra virgin olive oil to any recipe to improve the flavour. Always look for extra virgin cold pressed to get the quality you want in an olive oil.
SIMPLE INGREDIENTS
- Chicken breasts: skinless and boneless
- Extra virgin olive oil
- White balsamic vinegar
- Lemon juice
- Garlic
- Oregano: fresh for garnishing and dry to add to the marinade
- Thyme: fresh
- Himalayan salt: or sea salt
- Pepper
HOW TO MAKE THIS DELICIOUS RECIPE
In a medium bowl, whisk together olive oil, white balsamic vinegar, lemon juice, garlic, oregano, thyme, salt and pepper.
Add the chicken breasts to the marinade and turn the chicken breast over a couple times so the chicken breasts are coated well. Place in the refrigerator covered with saran wrap for a minimum of 3 hours, the longer the better as the chicken will tenderize and absorb the flavours.
Remove chicken breasts from refrigerator and allow to sit at room temperature for about 15 minutes before placing on hot grill.
Heat the grill to 400℉ while the chicken is sitting at room temperature. Lightly grease or spray grill surface and add chicken. Grill approximately 8-10 minutes depending on the side of the chicken breast with the lid down and the surface is seared with brown markings. Turn chicken over and grill for another 8-10 minutes with lid down and until the internal temperature has reached 165℉.
Once cooked, remove and allow to rest for 5 minutes before slicing.
Garnish with fresh herbs and a summer salad or vegetables.
Important to wait to slice the chicken breast once it’s removed from the grill. Slicing it too soon will result in losing some or most of it’s juices. You want to bite into a juicy tender chicken breast.
IT’S A SIMPLE RECIPE WITH ONLY A FEW STEPS:
- WHISK MARINADE IN A MEDIUM BOWL AND ADD CHICKEN BREASTS, COAT WELL
- ALLOW TO REST IN REFRIGERATOR FOR MIN. 3 HOURS
- REMOVE CHICKEN, REST AT ROOM TEMPERATURE FOR 15 MINUTES
- HEAT GRILL AND GRILL CHICKEN 8-10 MINUTES ON EACH SIDE WITH LID DOWN
- ONCE CHICKEN HAS REACHED 165 DEGREES FAHREINHEIT, REMOVE AND REST FOR 5 MINUTES
Grilled Mediterranean Chicken Breast
