This array of fresh organic greens and vegetables were purchased at my local market vendor Common Ground Market and CSA Farm. The flavour of freshness is what summer is all about!! Add grilled chicken to create a beautiful array of colours. But it doesn’t stop there, my sister and I had the pleasure of stopping at a local vendor at the market who sells top quality olive oil and balsamic vinegar. We were very impressed and decided to purchase a bottle of lemon balsamic vinegar. I used it on my grilled chicken and salad. Absolutely amazing! The local business is called The Pristine Olive.
Summer Salad with Lemon Balsamic Vinegar Dressing and Grilled Chicken

Salad:
- 1 head organic romaine lettuce (add additional greens of your choice to give it variety)
- 1/2 English cucumber, sliced
- 8 organic cherry tomatoes, sliced in half
- 1/2 organic red pepper, sliced
- 1/2 organic, yellow pepper, sliced
- 1/4 organic red onion, thinly sliced
- 3 radishes (optional)
- 2 organic nectarines, sliced
Dressing:
- 1/2 cup extra virgin olive oil
- 1/4 cup lemon white balsamic vinegar (substitute with white balsamic vinegar and 2 tablespoons of lemon juice)
- 3 tbsp unpasteurized pure honey
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Wash, and prepare greens and vegetables for salad
- Slice nectarines and place on grill 4 minutes each side, enough to create the grilling markings.
- Measure and whisk the dressing together. Pour over salad just before serving.
- Enjoy this light and very flavourful dressing over your favourite salad.

I can’t stress enough to purchase quality pure olive oil and if you can find good quality lemon white balsamic vinegar, it will make all the difference in the flavours.
Grilled Chicken with Lemon White Balsamic Vinegar Marinate
With simple ingredients to create this grilled chicken recipe, you can get the most flavours.
Placing your zip-lock bag into a bowl is a great trick to keeping the chicken in place and avoiding any spills when pouring the marinate over the chicken and into the zip-lock bag.
Grilled Chicken with Lemon Balsamic Marinate
RoseIngredients
- 4 boneless, skinless organic chicken breasts
- 1/2 cup extra virgin olive oil
- 1/4 cup lemon white balsamic vinegar (substitute with white balsamic vinegar and 2 tablespoons of lemon juice)
- 3 cloves garlic, minced
- 1 tsp fresh or dry oregano
- 1 tsp fresh rosemary
- 1 tsp salt
Instructions
- Prepare marinated in a measuring cup and whisk together.
- Place an opened zip-lock bag inside a medium bowl, and place the chicken breasts inside the bag. Pour the whisked marinated over the chicken breasts and place in the refrigerator for a minimum of 3 hours, the longer the better as the chicken will absorb the flavours of the marinated.
- Remove chicken breasts from refrigerator and allow to sit at room temperature for about 15 minutes before placing on hot grill.
- Grill each side approximately 7-10 minutes depending on the side of the chicken breast.
- Once cooked, remove and allow to rest for 5 minutes before slicing.
- Place the sliced chicken breast over the Mixed Summer Salad with Lemon Balsamic Dressing or a mixed green salad of your choice.
Nutrition
Once you remove the chicken from the grill, allow it some to rest and then slice on an angle. Place over salad by overlapping the chicken to create an appealing presentation.
