One-Pan Chorizo Stew with Sweet Potato and Chickpea

This spicy Spanish sausage stew recipe is hearty, satisfying and rich in protein with the goodness of sweet potatoes and chickpea. A quick and easy stew for any day of the week. 

This delicious stew consists of sweet potatoes, coloured peppers, zucchini that offers many flavours and textures, and the sausage is bold in it’s flavours, and by adding chickpeas it offers additional protein to this dish. The herbs have complimented this healthy dish and truly makes this a comfort meal. 

INGREDIENTS AND TIPS

Sausage: this pork sausage is slightly spicy depending on how much chili was added. Choose the uncooked mild chorizo for this recipe. It has the right amount of flavour and heat for this recipe.

Onion and garlic: add the base flavour to this recipe  

Coloured peppers: I always like to use coloured peppers in recipes as they offer sweetness to the dish  

Sweet potatoes: if you haven’t added sweet potatoes to a stew or chili, I highly recommend it. It offers a sweet flavour as well a natural starch to the dish

Zucchini: takes on the flavours with whatever it is cooked in and it adds colour and nutrients 

Chickpeas: gives this dish additional protein and texture

Diced tomatoes and tomato paste: my recipe suggests canned diced tomatoes, however, if you have fresh ripe tomatoes, that would work too. My only suggestion is, it would require longer cooking in order for the liquid in the tomatoes to evaporate and the stew to thicken, and the tomato paste will enhance the thickness  

Herbs: adding these two herbs oregano and thyme, they both compliment this dish perfectly. They are not overwhelming, but enhance the flavours and if you have fresh herbs, I recommend using fresh whenever you can

Salt: my go to salt is Himalayan sea salt and you don’t have to use as much and it loaded with minerals

When you think about stews, we start imagining a combination of vegetables with either meat, poultry, fish or seafood. Either way, every stew dish becomes a comfort food, something we all enjoy and grown to include in our recipe collection. 

HOW TO MAKE THIS RECIPE

Begin to sauté the onions in a large skillet, until transparent, then add sausage and cook until there is no longer any pink. Then add garlic and sauté for about 1 minute. I found it is very easy to break down the sausage to smaller pieces, and if you prefer, you can easily remove the casings. While stirring, add coloured pepper, and sweet potato. Cook for about 1 minute. Add diced tomatoes, tomato paste, chickpeas, salt, oregano and thyme.

Simmer for about 20-25 minutes, partially covered, stirring occasionally. The last 10 minutes, add the zucchini and continue cooking without a lid until the sweet potatoes and zucchini have softened. The stew sauce will thicken as it cooks.

STORE this delicious stew in a container with an air-tight lid in the refrigerator for up to 3-4 days. This dish, like most stews can be stored in the freezer for up to 3 months in a suitable freezer safe container.

  • 2 tbsp extra virgin olive oil
  • 1 medium onion, chopped
  • 4-6 links chorizo, sliced 1/2 inch wide
  • 2 cloves garlic, minced
  • 1 yellow/orange/red pepper, sliced
  • 2 sweet potatoes, cubed
  • 1-28 oz can diced tomatoes
  • 1 tbsp tomato paste
  • 1-15 oz can chickpeas, drained and rinsed
  • 1 tsp dried oregano (fresh 2 tsp)
  • 1 tsp dried thyme (fresh 2 tsp)
  • 1 tsp sea salt
  • 1 zucchini, cut into quarters
  • garnish with parsley, cilantro, or sour cream

Instructions
 

  • In a large skillet over medium heat, add olive oil, then add onion and sauté for about 3-5 minutes. Add sliced chorizo, and sauté until sausage is cooked through. Then add garlic and sauté for about 1 minute.  
  • While stirring, add coloured pepper, and sweet potato. Cook for about 1 minute. Add diced tomatoes, tomato paste, chickpeas, salt, oregano and thyme. Simmer for about 20-25 minutes, partially covered, stirring occasionally. The last 10 minutes, add the zucchini and continue cooking without a lid until the sweet potatoes and zucchini have softened. The liquid will reduce and the sauce should have thicken.
  • Garnish with chopped parsley, cilantro, sour cream, cheese or your favourite toppings.
