These healthy blueberry breakfast bars are layered with gluten-free ingredients and flavoured with lemon, cinnamon, maple syrup and topped with added nuts for crunch that reminds you of a blueberry crumble. No refined sugar is added.
These easy to make vegan healthy breakfast bars are made with oat flour that is one of the nutritious flours to use, and by adding either chai or flaxseed adds another nutritious component to this recipe. They are a perfect go-to-breakfast bar that provides many healthy benefits and, it has all the yumminess that we so enjoy!
How healthy are these breakfast bars :
- Gluten-free for those who are looking for an alternative – used oat flour that is one of the healthiest gluten-free options loaded with vitamin B’s and several minerals, easier for digestion
- No refine sugar – instead a healthy natural alternative maple syrup is added
- Blueberries are high in antioxidants, prevents cancer, protect heart health, improves mental health, beneficial for digestion and maintains healthy bones and more!
- Coconut oil is a healthy fat, boosts heart health, encourages fat burning, it does contain saturated fats, however it increases the good HDL cholesterol
- Chai seeds are high in antioxidants, minerals, fiber and omega 3
- Flaxseeds are high in protein, excellent for digestion, loaded with minerals, omega 3 fats, and fiber
- Maple syrup is one of my favourite sweeteners to use in my baking and cooking; it is a healthier alternative sweetener that is high in antioxidants, fights diseases, protects against cancer and contains many vitamins and minerals
- Lemons are one of the few ingredients that adds such a fresh citrus and will enhance the ingredients it is added to; it’s high in Vitamin C, aids in digestion, is an excellent choice for hydration and not to mention it’s great for the skin
- Cinnamon will control and lowers blood sugar levels, it’s high in antioxidants, has anti-inflammatory properties, beneficial for the heart, and has powerful medicinal properties
Recipe Ingredients:
Oat flour: is a gluten-free option and has a mild nutty flavour
Rolled oats: is one of the healthiest gluten-free whole grain and gives these bars it’s texture and flavour
Chai/flaxseed: either one are both excellent choices to add that additional health benefit
Himalayan salt: is my go to salt for flavour, contents several healthy minerals and much less processed; salt will preserve and brings out the flavours of other ingredients
Coconut oil: vegan option to add to this recipe and has a mild coconut flavour
Maple syrup: an excellent option for a natural sweetener
Nuts: if you want that extra crunch in these bars, add some chopped nuts
Blueberries: add fresh or frozen and only requires a short time of cooking
Tapioca flour/arrowroot flour: I prefer either one for thickening
Lemon juice and zest: add a fresh citrus flavour and lemon enhances the flavours in these bars
Cinnamon: a spice that flavours perfectly with these ingredients
Vegan Blueberry Oat Nut Breakfast Bars

Crust and Topping:
- 1 1/2 cups oat flour
- 1 1/4 cups rolled oats
- 1 tbsp ground chai or flaxseed
- 1/4 tsp Himalayan salt
- 1/3 cup coconut oil
- 1/4 cup maple syrup
- 1/4 cup chopped walnuts, almonds or pecans (optional)
Filling:
- 2 cups blueberries, fresh or frozen
- 1 tbsp tapioca flour/arrowroot starch/cornstarch
- 2 tbsp maple syrup
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1/4 tsp cinnamon
Instructions
- Preheat oven to 350°F. Line a 9 inch square baking pan with parchment paper.
- In a large bowl, stir together oat flour, rolled oats, chia or flaxseed, and salt. Add coconut oil and maple syrup and combine. If it feels too dry, add a couple drops of water. The batter should stick together.
- Pour 1 ¾ cup of dough into the prepared baking pan, and press evenly using a back of a spoon or spatula. Set aside.
- Filling: In a small saucepan, add the blueberries, tapioca flour or arrowroot starch, maple syrup, lemon juice, lemon zest, cinnamon. Cook for about 3-4 minutes until it starts to thicken. Take a fork and mash some of the blueberries. Pour the blueberry mixture over the crust, and then add the remaining ¾ cup over the blueberry mixture and using a spatula, lightly pat down the topping. Option is to sprinkle chopped nuts.
- Bake for 35 minutes or until crispy on top and golden. Remove from oven, place baking pan on a cooling rack. Allow to cool before cutting about 2-3 hours. The longer it sits, the blueberry mixture will set and it will prevent the bar from crumbling.
- Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. They will freeze to 6 months.

How to make this recipe:
Combine the crust and topping ingredients in a large bowl, and set aside. Then add the blueberries, tapioca flour or arrowroot starch, maple syrup, lemon juice and zest and cinnamon to a small saucepan and cook for about 3-4 minutes until you see it starts to thicken.
Using a spatula or back of a spoon, and press 1 3/4 cups of the crust mixture into a lined 9 x 9 inch square pan. Then evenly add the blueberry mixture over the crust.
The final step is to add the remaining cup for the topping and if you so desire, now is the time to add some nuts for crunchy topping.
This delicious breakfast bar has no refine sugar added and is naturally sweetened with maple syrup. A healthy and natural way to start your day!
