Whipped Cottage Cheese with Caramelized Onions

Whipped cottage cheese is so creamy and fluffy in texture and when coupled with caramelize onions it becomes an ideal dip, sauce or spread!  

Cottage cheese is not one of the cheeses you think about to whip up for your next party gathering. But I have to admit, it is one of my favourite. It is light and fluffy unlike many of the other cheeses and it makes a delicious and wonderful snack or sauce. 

This simple recipe only requires a few ingredients and easy enough to make. The only time consuming part of this recipe is caramelizing the onions and I must say it is worth that extra time it takes. It adds so much depth and flavour to this recipe.  

INGREDIENTS YOU WILL NEED

  • Onion: either known as cooking or yellow onions
  • Extra virgin olive oil
  • Butter
  • Cottage Cheese: I use 4% cottage cheese 
  • Yogurt: choose Greek yogurt for this recipe
  • Honey
  • Garlic powder
  • Salt and pepper

In a large skillet over medium heat, add olive oil and butter, once butter is melted, add onions. Sauté for about 40-45 minutes until onions have softened and golden in colour. Set aside to cool.

Using food processor, add the cottage cheese, yogurt, garlic powder, half the honey, salt and pepper. Whip until the cottage cheese curd are no longer visible and its creamy in texture. Transfer to a serving bowl.

Once the onions have cooled, stir in most of the onions into the whipped cottage cheese mixture. Garnish with the extra onions and drizzle the remaining honey over the sauce.

The luxurious dip or sauce can be enjoyed at your next gathering as an appetizer or as side or condiment.

FAQ

Are there any techniques to getting the onions to caramelize more quickly? I would suggest to add a lid, this will help the onions to soften and start to caramelize. Careful not to increase the heat to high, as it can burn the onions.

What are the best onions for caramelizing? I would suggest yellow onions, also known as cooking onions or Spanish onions. They hold up the best and are most versatile and they have a lovely sweet flavour we all look for in an onion. 

What is the best cottage cheese to use for this recipe? Honestly, the only cottage cheese I use in all my recipes is the 4% fat. It’s creamy and doesn’t have a lot of water content. The results are the best in my opinion.
