Maple Mashed Sweet Potatoes

Mashed sweet potatoes are a healthy, easy and such a delicious side dish to serve at any holiday. The maple syrup offers additional sweetness and the pomegranate adds a fresh crunch.

For me sweet potatoes are a perfect alternative to squash. If you are like me, I am not a fan of peeling and cutting up a butternut squash, even though I will go out of my way to make it. But when I can peel a few sweet potatoes and have similar flavours, it’s a win-win! 

What to serve this delicious sweet potato side with.....

This side dish goes with so many dishes, that includes, roasted turkey or chicken, it makes a lovely accompaniment to beef dishes, whether it’s stews, or roasts. Try roasting this delicious root vegetable and add it to soups, stews, chili’s and salads. 

Recipe Ingredients:

  • sweet potatoes 
  • salt
  • unsalted butter
  • heavy cream
  • fresh ground pepper  
  • parsley
  • pomegranate
  • maple syrup

When making this recipe:

Choose firm, and unblemished sweet potatoes. Wash them to remove any dirt. Peel the potatoes with a peeler, and cut them into 1 inch cubes or chunks. Cook them in medium sauce pot for 15 minutes and enough water to cover them. 

When mashing, first break up the potatoes with a masher or electric beater and add butter, heavy cream or half and half, parsley and maple syrup. Season with salt and pepper. Mash the potatoes to your desired creaminess. 

Garnish with additional parsley, and pomegranate and drizzle with the extra maple syrup. It’s that easy!! 

How nutritious is sweet potato, well it is very healthy for us! This sweet root vegetables are an excellent source of fiber, and several vitamins and minerals. They are high in antioxidants that protects the body from free radical damage that are linked a number of diseases, such as heart disease, cancer and aging. This vegetable is healthy for our gut, that helps our digestion tract. Sweet potatoes are rich in beta-carotene, and comes form the bright orange colour, similar to carrots that are extremely helpful to improve eye health. Furthermore, this wonderful root vegetable supports our immune system and brain function. So the next time you are in the grocery, load up on sweet potatoes. Your eyes, stomach and brain will thank you for it!

Equipment

  • medium sauce pot

Ingredients
  

  • 1 1/2 sweet potatoes, peeled and cut into cubes (2 large)
  • 1 tsp Himalayan salt
  • 2 tbsp unsalted butter
  • 2 tbsp organic heavy cream (or half and half)
  • 1 tbsp fresh chopped parsley plus extra for garnishing
  • 1 tbsp pomegranate for garnishing
  • 2 tbsp maple syrup, extra for garnishing

Instructions
 

  • Peel and cut the sweet potatoes into 1 inch chunks and add them to a medium-large sauce pot and add enough water to cover the potatoes and add salt.        
  • Bring the pot to a boil, and then reduce heat to simmer with the lid partially on for about 15 minutes or until the potatoes are tender.
  • Drain the potatoes and leave in pot. Using an electric beater or hand masher, and start mashing. Add the butter, heavy cream, one tablespoon of parsley and maple syrup, and beat on medium-low to get a creamy texture. Season with salt and pepper.
  • Transfer to serving bowl. Garnish with the remaining parsley, pomegranate and drizzle the remaining maple syrup. 

Notes

Make this delicious sweet potato side dish the day before a holiday event or dinner party.

How to make this recipe:

Peel and cut the sweet potatoes into 1 inch chunks and add them to a medium-large sauce pot and add enough water to cover the potatoes and add salt. Bring the pot to a boil, and then reduce heat to simmer with the lid partially on for about 15 minutes or until the potatoes are tender.  Drain the potatoes and leave in pot. Using an electric beater or hand masher, and start mashing. Add the butter, heavy cream, one tablespoon of parsley and maple syrup, and beat on medium-low to get a creamy texture. Season with salt and pepper.       

Important to use a good quality heavy (whipping) cream for your recipes. I used Harmony Organic Dairy heavy cream, and it is a local dairy producer that I recently partnered with and their products are excellent.
