When you cook meat with the proper temperature and the right amount of time, you end up with succulent and tender pork chops. Serve these delicious pork chops with the all time favourite mashed sour cream potatoes and maple caramelized apples. It is comforting and so flavourful that your whole family will love!
INGREDIENTS AND TIPS
Pork Chops: when selecting the right cut for this recipe, choose 1 inch thickness and bone-in pork chops. You want the pork chops to be juicy and tender and when you have a thinner cut, your cooking time will be less, which means you need to take that into consideration.
Seasonings: salt and pepper; I use Himalayan salt for it’s flavour and nutritional value
Extra Virgin Olive Oil: recommend to use a good quality evoo
Butter: my preference is unsalted butter
Garlic: whenever I can I will add a little extra garlic, it adds so much flavour to a dish
Rosemary: is a pungent, yet very delicious flavour to the pork chops. Other options are thyme, tarragon or sage.
HOW TO MAKE THIS DELICIOUS RECIPE
Heat the large skillet over medium to high temperature, add olive oil and 1/2 tablespoon butter. Once hot, add the pork chops and 2 sprigs of rosemary and sear the chops until golden brown about 3-4 minutes. Turn over and cook for another 2-3 minutes. Transfer to a baking dish.
Butter Rosemary Sauce: Add the remaining 1 tablespoon of butter, once melted add the garlic and once the garlic has released it’s aroma, about 30 seconds to 1 minute, pour over the pork chops and add the tablespoon of rosemary. Transfer to the oven and bake for 10 minutes.
COOKING TIPS
When cooking with pork it is recommended to remove the pork chops from the refrigerator and allowing the pork chops to sit at room temperature for a minium of 20 minutes. This will improve it’s taste and texture. The outcome will be juicy and tender pork chops. Pat to dry and season the pork chops with salt and pepper on both sides.
Butter is recommended for not only flavour but it will create a crispy texture. You don’t need a lot of butter and this recipe only added 1/2 teaspoon to the skillet before searing the pork chops.
When you remove pork chops from oven, allow it to rest for 5 minutes. My choice is to serve it with sour cream mashed potatoes, maple caramelized apples and a side salad.
Making caramelized apples, simply add 1/2 tablespoon of butter to a skillet and the sliced apples. On a low-medium temperature, cook the apples and halfway through add about 1 tablespoon of maple syrup. All the apples to simmer for about 20 minutes, until you see the apples starting to get golden in colour. Make sure you flip them over halfway through the cooking process. Maple caramelized apples are so delicious and they are an all-time favourite side to add to a pork dish.
SUBSTITUTIONS
Pork Chops – you can substitute bone-in for boneless or chicken thighs for this recipe.
Extra virgin olive oil – although it is recommend, you can substitute for avocado oil or a vegetable oil.
Unsalted butter – if you use salted butter, then I would reduce the amount of salt to 1/3 of a teaspoon.
Rosemary – compliments pork really well, but if you are not fond of the taste, you can use tarragon, sage or thyme.

Instructions
