This easy chicken fajitas recipe have a hint of spiciness with the caramelized peppers and onions tossed with chicken strips all roasted in one pan, then topped with your favourite garnishings. Definitely a crowd-pleaser!
When you take chicken strips and add spices, herbs, salt and pepper, then allow it to rest so the chicken absorbs all that goodness. Option is to marinate the chicken for 30 minutes or more in the refrigerator, covered to really soak in those flavours. Then coat the onions, and peppers together with a good quality extra virgin olive oil, salt and pepper. Then add them all together in a baking pan and roast for 15-20 minutes. WHAT MAKES THIS A HEALTHY AND DELICIOUS MEAL
You may ask, what makes this dish healthy? Well, let’s start by looking at the ingredients, first and foremost is:
Chicken: I use skinless, boneless chicken breasts that are the leanest with very little fat. Also, I only purchase hormone and antibiotic free chicken and sometimes organic. It is raised without any added hormones, in a more sustainable environment with care for their animals. They are usually fed products that contain no pesticides, hormones, antibiotics or any foreign substances. If you don’t have access to organic or hormone/antibiotic free chicken or as we are well aware the huge increase in food prices, then I would suggest to ask the butcher at your local grocery store, where the chicken comes from, is it mass produced? Can you substitute for chicken thighs, absolutely!
Seasoning: if you were not aware, each ingredient added has it’s own health benefits. Chili powder and paprika have excellent anti-inflammatory properties which means it is so beneficial for arthritic pain, autoimmune disorders, cancers and diseases. They improve heart health, lowers blood pressure, and improves our immune system to fight off many diseases to name a few. Garlic are we know it is a super food that improves our immune system and fights off many diseases. Oregano is sometimes overlooked, but it is high in antioxidants that help fight off free radicals in the body and prevent further cell damage that leads to cancer, heart disease, diabetes and Alzheimer’s. As an antibacterial, it is known to fight bacterial infections. That’s why when oregano oil is known to be potent and widely used for nasty colds.
Vegetables: let’s be honest, all vegetables are healthy and have many nutritional benefits to include in your diet. Roasting will loose a small amount of nutrients, but the benefits out weigh by not including them in your diet.
Now you know some of the health benefits, but what makes this fajita recipe so delicious. It’s the quality and freshness to the ingredients. I would recommend to find out where your food comes from, the produce you buy, look at the labels to see how far were they shipped in from and the quality of chicken. You would be surprised at how much you can learn by asking questions about the food you buy. Also, replace your spices and herbs every 8-12 months.
WHY ARE TOPPINGS SO IMPORTANT?
When choosing toppings for your fajitas, you want them to be fresh, flavourful and oh so yummy! You want them to compliment the fajita seasoning and remember these are suggestions. You don’t need to add all of them and chose some of your own favourites. These are my choices for toppings:

- Salsa: you can make your own by combining diced tomatoes, peppers, onions, herbs, lime juice, salt and pepper
- Cherry tomatoes: or grape or heirloom tomatoes
- Cheddar cheese: use a sharp cheddar for extra flavour
- Sour cream or Greek yogurt: is definitely are must
- Green onions: for that extra onion kick
- Cilantro or parsley: okay, I am not a fan of cilantro so it’s parsley for me
- Lime: add some lime juice for that added citrus zip

MAKING THESE FAJITAS
Season the chicken with the seasoning mixture and if you prefer more spice, add a few red pepper flakes and set in the refrigerator to marinade for 15-20 minutes. Once the onion, garlic, and peppers are sliced add them to the baking sheet and season with salt and pepper and add 2 tablespoons of extra virgin olive oil and toss to to coat. Then arrange the marinade chicken in amongst the vegetables.
Place and assemble the fajitas on a warm homemade tortilla or store-bought and then decide what toppings you want to add or add some of your own favourites.

Easy Sheet-Pan Weeknight Chicken Fajitas

Ingredients
Marinade seasoning for chicken:
- 1 tbsp chili powder
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp extra virgin olive oil
- 2 boneless, skinless chicken breasts, cut into strips (hormone/antibiotic free)
Vegetables for fajitas:
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 1 onion, sliced
- salt and pepper
Topping options:
- guacamole
- salsa
- cherry tomatoes, sliced
- cheddar cheese, grated
- sour cream/greek yogurt
- green onions, chopped
- cilantro or parsley
- 1 lime, sliced
Instructions
- Preheat oven to 400°F.
- Mix together the fajita seasoning in a medium bowl, add the strips chicken breasts and 2 tablespoons of olive oil. Mix well to coat and set aside.
- While chicken is marinading, prepare red and yellow peppers, and onion, and add to the sheet pan. Season with salt and pepper, and add the remainging 2 tablespoons of olive oil and toss to coat. Add the seasoned chicken strips, arranging them throughout the baking sheet so everything will cook evenly. Bake for 15-20 minutes until the chicken and vegetables are cooked and crispy.
- Tortilla wraps: option are store-bought or make your own tortillas. For store-bought, place in foil in a warm oven for about 5-10 minutes or wrap them in paper towel and microwave for 20 seconds. For homemade, go to Homemade Tortilla recipe.
- To arrange fajitas, add the roasted chicken, peppers and onion to each tortilla and add your favourite toppings. Garnish with cilantro or parsley and squeeze some lime over each. Serve warm and enjoy!
