Easy Tomato, Spinach and Feta Pasta

A super easy meatless pasta recipe with few ingredients and big flavours with juicy sweet cherry tomatoes with nutrient rich spinach and a tangy kick from the feta! It only takes 30 minutes! Garnish with chopped walnuts, fresh basil and parsley. A perfect weekday meal! 

Who doesn’t love a quick and easy recipe when all you want to do is have dinner on the table…well, I know I do! This delicious pasta dish starts with juicy sweet tomatoes and garlic then the spinach we all love to add for it’s rich nutrient dense benefits and then the pasta and slightly salty tangy feta….yum!! Don’t forget to add those walnuts for a crunch but also for its richness of omega 3’s along with a sliced basil and parsley. 

WHY MAKE THIS RECIPE

What I love about this recipe is it doesn’t need any heavy creams to flavour this dish. The juices from the cherry tomatoes with a couple of tablespoons of pasta water is enough to moisten the pasta. Along with the feta cheese and a drizzle of olive oil. 

HOW TO MAKE THIS DELICIOUS RECIPE

First bring a medium sauce pot of water to a boil. Add ¼ teaspoon salt and pasta and follow package instructions until is al dente; and drain. Reserve 1/4 cup of the pasta water. Set aside.

In a medium skillet or cast iron pan, add olive oil over medium-high heat, add cherry tomatoes. Cook the tomatoes for 2-3 minutes, until they are softened. Add garlic and basil cook for another minute. Season with salt and pepper.

Add spinach to the skillet, once spinach has wilted, add the pasta with 2 tablespoons of the reserved pasta water and feta. Allow to heat through and gentle stir the pasta and allow the feta to begin melting.

Garnish with chopped walnuts, fresh basil and parsley. Drizzle some olive oil over the pasta and ENJOY!

Gently stir the feta and when it starts melting then it ready to add chopped walnuts, basil and parsley. You can add a little extra feta before serving as well.  

Store this pasta dish in the refrigerator for up to 3 days in a container with a lid. 

The pasta dish will compliment most proteins and my favourite is Crispy Honey Chili Chicken Cutlets or Herb Crispy Chicken Cutlets or grilled, baked or breaded chicken. It will go nicely with fish, salmon or shrimp, pork, lamb or beef as well.

Ingredients
  

  • 6 oz pasta, bowtie, penna, spaghetti
  • tbsp extra virgin olive oil
  • 5 oz heirloom cherry tomatoes, cut in half
  • 3 cloves of garlic, minced
  • 1/2 tsp dried basil
  • 1/4 tsp sea salt
  • pinch of pepper
  • 3 oz feta, crumbled
  • 1/4 cup walnuts, chopped
  • 4 fresh basil leaves, sliced
  • 2 tbsp parsley for garnishing
