One-Pan Roasted Italian Sausage and Vegetables with Feta

By roasting Italian sausage and vegetables in a sheet-pan with a generous amount of a good quality olive oil and fresh rosemary gives this dish it’s exceptional flavours. Roasting vegetables is ideal to bring out their natural sweetness making them so delicious! 

This oven roasted dish is so delicious with an array of tasty flavours, that include sweetness from the red pepper, sweet potatoes and red potatoes then the spiciness from the sausage. Can’t forget the caramelized onions, my goodness, it doesn’t get better then that! 

Roasting is one of my favourite methods of cooking. Growing up, it was most often used and I think it was because of our large family, living on the farm and Mom cooked for the workers as well. Mom would often roast chicken, turkey, or meats in the oven along side a variety of vegetables. I remember how incredibly delicious everything  tasted. Let’s be honest, it was easier for Mom when it came to feeding over 20 people every day during the harvest months. 

WHY IS ROASTING THE BEST COOKING METHOD

  • Roasting has been one of the oldest methods of cooking when stoves and ovens became popular. Why you ask? One reason is whatever you add to meats, poultry, fish or vegetables during roasting, they will absorb those flavours creating a delicious outcome.
  • Roasting is easy! It doesn’t require you to be checking the cooking process every 10 minutes. You sit back and relax and let the oven do the work. 
  • This method also is one of the healthiest methods since the nutrients aren’t lost while the food is cooking. As long as it isn’t overcooked or at high tempertures.
  • Have you ever tasted a potato roasted compared to boiled? The flavours cannot be compared. Roasted makes our food taste so much better. The natural sweetness of the vegetables are released and they absorb the seasonings, spices or herbs added, creating such flavourful vegetables.
  • It can be one of the quickest methods, in this case, most one-pan/sheet recipes can have dinner on the table within 30-40 minutes.  

WHAT YOU WILL NEED FOR THIS RECIPE

  • A baking sheet: I like to have one baking sheet on hand for only roasting my vegetables, chicken and sausages. 
  • Italian sausage: you can easily substitute other sausages for this recipe 
  • Vegetables: onion, red pepper, sweet potatoes, and red potatoes, now just to know red potatoes are one of the best choices for roasting, they get crispy and hold their shape; sweet potatoes are so delicious roasted as their natural sweetness is released , just keep in mind they become very tender once cooked 
  • Greek extra virgin olive oil: my go to olive oil is Greek or Italian, but most often Greek. The reason is I have close friends who are Greek and they have told me many stories as to how olives are harvested and processed to make olive oil in their home country. Less processed, no harmful chemicals are used and hand picked with care.  
  • Seasonings: salt and pepper 
  • Herbs: rosemary and parsley
  • Feta cheese: goat cheese could be added as well 

PREP AHEAD

Since this is one of the easiest cooking methods and it is the quickest for clean up on those busy weekdays. Here are few suggestions you can do when prepping this recipe. 

  • Cut red pepper and onions ahead and place them in containers with lid or sealed zip-lock bag. Keep in mind onions should be stored on their own.
  • The red potatoes once cut will need to be placed in cold water in the refrigerator.
  • Sweet potatoes shouldn’t turn brown once cut, place in a container with lid or zip-lock bag. 
  • Wash the herbs ahead and wrap in paper towel then plastic wrap. 

HOW TO MAKE THIS RECIPE

Arranged the prepared vegetables and drizzle with olive oil, season with salt and pepper. Toss to coat. I like to use my hands. Add the sausage and place them accordingly. Then add fresh rosemary sprigs and needles scattering throughout the pan.  

One-pan meals are the best for those busy weekdays. It’s as simple as going through your fridge and toss the veggies in olive oil, some herbs, garlic and seasonings.

Serve this hearty and delicious dish and your family will love it! Garnish with feta, parsley and fresh rosemary.

Equipment

  • 10 x 15 inches sheet pan

Ingredients
  

  • 4 - 6 inch (15 cm) links Italian sausage, cut in half
  • 1 large onion, sliced
  • 1 large red pepper, roughly cut
  • 2 sweet potatoes, peeled and cut into 1" cubes
  • 10-12 mini red potatoes, cut in half
  • 4 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 sprig of fresh rosemary
  • 2 sprigs fresh parsley, chopped for garnish
  • feta cheese, for garnishing

Instructions
 

  • Preheat the oven to 425°F.    
  • Place prepared onions, pepper, sweet potatoes, and red potatoes on baking sheet and if vegetables are wet, pat dry with paper towel. Drizzle olive oil over the vegetables and season with salt and pepper, then toss to coat. Spread out the vegetables throughout the pan.
  • Cut sausages in half and place on baking sheet in amongst the vegetables. Scatter fresh rosemary throughout the pan. Bake for 30 minutes until sausage is cooked and vegetables are tender and roasted.   
  • Garnish with parsley, and feta cheese. Serve immediately. Enjoy!
