This cod recipe is such an easy dish to make and it’s ready in 15 minutes. If you decide to add the stir-fried vegetables or you can easily roast them in the oven, it completes the meal.
What do you know about cod?
Cod is a white mild fish that is flaky yet firm enough to withstand baking or broiling. The Atlantic cod is slightly sweeter and softer, where the Pacific cod is more savory and firm. It’s a great fish to add spices and herbs, and don’t forget to add lemon to fish to enhance the flavour of the fish. Important to purchase fresh fish, if the fish has a strong fish smell, it means it’s not fresh.
Cod has a lot of health benefits, it is high in protein and low in fat, and a good source of Vitamin A, C, E, and Vitamin 6 and B12 and niacin, phosphorus, potassium, selenium and a great source of omega 3 and 6 fatty acids that are all important for a healthy heart and a good source for brain health too. It is also one fish that is low in mercury, so it’s a fish that we can eat without that concern.
Recipe ingredients:
Cod: I like to purchase wild fish if all possible; for the flavour, and they are caught in deep waters, call me old-fashion but that is preference and there has been a lot of controversy over farmed fish; choose fresh and all you need is 2 fillets for this recipe
Butter: I like to use unsalted to control the salt content
Garlic: one use a large clove so two small cloves would work too for this recipe
Extra virgin olive oil: always recommend good quality
Lemon juice: enhances the flavour and adds freshness to this fish recipe
Seasoning: salt and pepper was added to the butter sauce so very little is needed
Creole Seasoning consisted of basil, oregano, thyme, paprika, onion and garlic powder, cayenne, black pepper and salt
Baked Creole Garlic Butter Cod with Vegetables

- 2-6 oz wild cod fillets
- 2 tbsp unsalted butter, softened
- 2 clove garlic, minced
- 1 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1/2 lemon, sliced
- pinch of salt and pepper
Creole Seasoning: makes 1/4 cup
- 2 tsp dried basil
- 2 tsp dried oregano
- 1 tsp dried thyme
- 1 tbsp smoked paprika
- 2 tsp onion powder
- 2 tsp garlic powder
- 1/2 tsp cayenne
- 1/2 tsp black pepper
- 1 tsp Himalayan salt
Instructions
- Preheat oven to 400°F.
- In a small bowl, combine the creole seasoning and set aside.
- Mix in a small bowl, butter, garlic, olive oil, lemon juice, salt and pepper. Spread the mixture in a baking dish, and lay the cod on top.
- Sprinkle and lightly pat the creole seasoning over the cod pieces, then add slices of lemon over each piece. Bake in the preheated oven for 15-20 minutes.
- Serve immediately with a vegetable stir-fry, rice, roasted potatoes, steamed vegetables.
