Chocolate Ice Cream Sandwich Cookies

This decadent chocolate cookie recipe is one you need to have on hand. They are rich that almost has you thinking you are eating a brownie. They have less sugar then most recipes, and when you add ice cream to the make an ice cream sandwich, it gives it the extra sweetness. If you prefer to eat them on their own, they are just as yummy. 

A summertime favourite! You don’t have to be a kid to enjoy these treats. I make them every summer and I prefer an ice cream filling, although a cream cheese with yogurt is another option. I doubled the recipe to make extra so I could freeze them and enjoy the cookies anytime I have a chocolate craving. Cookies will keep in the refrigerator for up to 2-3 weeks but these are so good, they won’t last! 🙂

Ingredients you will need for this recipe:

Flour: all purpose flour is all you need; I use organic or spelt flour 

Cocoa powder: I use the Fair Trade Camino Cocoa Powder, that is Dutch-Processed; it’s a rich chocolate flavour

Baking soda and powder: are both leavening agents to give some volume and a texture to the cookie

Salt: enhances flavour 

Butter: unsalted is what I use to control the amount of salt is used in recipes; salted butter can be easily substituted 

Sugars: I use raw fine sugar that is unbleached, and brown sugar adds flavour and moisture to the cookies

Egg: good for flavour and structure to the cookies

Vanilla extract: adds a lovely flavour

Ingredients
  

  • 1 cup organic all-purpose flour
  • 1/3 cup unsweetened organic cocoa powder
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, room temperature
  • 1/4 cup raw fine sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 tsp pure vanilla extract

Instructions
 

  • Pre-heat oven to 325°F.   Line a large or two small baking sheets with parchment paper.
  • In a medium bowl, whisk to combine together the flour, cocoa powder, baking soda and powder and salt.
  • In an electric standing mixer with paddle attached, cream butter and sugars together until light and fluffy. Add egg and vanilla. Beat until well. Gradually add the flour mixture until dough is combined and cookie dough comes together.
  • Using an ice cream scoop as a guide, take the dough and roll in hands to form into balls. Place on baking sheets and slightly flatten cookie dough to the size you desire. For larger size cookies, you will get 10 cookies, and smaller will give you 12 cookies.
  • Bake for 15 minutes, or until the cookies begin to crack slightly. Cool cookies on wire rack.
  • Once cooled, scoop vanilla ice cream and place in the center of the cookie, and take another cookie and place on top of ice cream and press lightly.
  • Indulge and enjoy every bite!

Notes

These cookies can be stored in an air-tight container in the refrigerator for about 2 weeks or in the freeze for 3-4 months.

For larger size cookies, you will get 12 cookies, and medium size about 15 cookies. Bake for 15 minutes, or until the cookies begin to crack slightly. Cool cookies on wire rack.

These cookies have a rich chocolate flavour and chewy centers that has you thinking you are eating a brownie. I always like to gift my bake goods to family and friends. 

Once the cookies are cooled, scoop vanilla ice cream or another option is mix together 1/2 cup cream cheese with 2 tablespoons of Greek yogurt (plain or vanilla) and place in the center of the cookie, and take another cookie and place on top of ice cream and press lightly. Chop dark chocolate to add to the edges of each sandwich. Enjoy!! 🙂
