Coconut Oatmeal Cookies

These healthy cookies has the best of both worlds! They have chewy centers and a crispy crunchy exterior. They are sweetened with coconut sugar and maple syrup. A perfect treat anytime of the day!

If you like the crunchy texture and flavour of coconut and the chewiness and taste of oatmeal you will love these cookies! They have substance and yet they are a light cookie that has you going back for more. I have to say it’s the best oatmeal cookie I’ve made! 🙂

Ingredients and substitutions:

Dry ingredients: spelt flour, baking soda, salt oats and shredded unsweetened coconut; for this recipe I used spelt flour as I tend to use it as often as I can; it helps to give these cookies a nutty flavour and is high in many nutrients. You can easily replace spelt with unbleached all-purpose flour 1:1 ratio. 

Butter: gives these cookies is richness, flavour and it will make these cookies more tender

Coconut sugar: I decided to use coconut sugar for added coconut flavour, however as I have mentioned on the recipe it can be easily substituted for regular and brown sugar or 1/2 cup of sugar or 1/2 brown sugar.

Wet ingredients: egg, vanilla and maple syrup, whenver I can I will add maple syrup to a baked recipe for flavour and it  helps to reduce the sugar content. 

 

A healthy cookie

This cookie can be easily enjoyed as a breakfast cookie with all of the goodness this cookie has. By using the natural sweeteners coconut sugar and maple syrup it won’t spike your blood glucose level, and considered to be lower glycemic index. This healthier option has iron, potassium, calcium, zinc and healthy fatty acids. Maple syrup has similar nutrients but the key nutrient is high in antioxidants that will reduce inflammation and fight off those free radicals that causes chronic diseases. 

Why I like to use spelt flour? The main reason I like to use this ancient grain is the benefits in digestion. Spelt flour promotes a healthy digestion and reduces inflammation compared to wheat flour. Helps to maintain a healthy weight and improves heart health, along with provide several nutrients!

Ingredients
  

  • 1 cup spelt flour (option all-purpose flour)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter
  • 1/2 cup coconut sugar (substitute 1/4 cup sugar and 1/4 cup brown sugar)
  • 1 egg
  • 1 tsp vanilla
  • 2 tbsp maple syrup (unpasteurized honey)
  • 11/4 cup rolled oats
  • 1 cup unsweetened shredded coconut
  • sunflower seeds, chai seeds, pumpkin seeds, chocolate chips (optional)

Instructions
 

  • Mix together flour, baking soda, and salt in a medium bowl and set aside.   
  • Beat butter in a large bowl until fluffy with an electric mixer. Add sugar and beat until well blended. Beat in egg,vanilla and maple syrup. 
  • Stir in dry ingredients and mix until combined. Add flour, oats and coconut into the butter mixture. Mix until well combined. Now is the time to add any seeds, nuts or chocolate chips. Wrap dough and refrigerator for 30 minutes.
  • Preheat oven to 350°F.
  • Using an ice cream scooper or two tablespoons, drop onto a baking sheet lined with parchment paper. Space cookies 2 inches apart and flatten to 2 inch rounds.
  • Bake cookies 12-15 minutes or until golden. Remove from oven and allow to cool on a wire rack.

How to make Coconut Oatmeal cookies:

Combining ingredients: used a electric mixer to beat butter, and sugar together. Then add the dry ingredients and liquid ingredients, rolled oats, and coconut. This recipe gives you the option to add seeds, chocolate chips or chopped walnuts. In this case, I decided to keep it simple, and enjoy the flavours of coconut, maple syrup and oats. Place dough in a bowl or wrap it in saran and refrigerator for 30 minutes.

Baking: use an ice cream scooper and scoop the dough on to the baking sheet with parchment paper, and flatten, then place them about 2 inches apart. Bake for about 12-15 minutes, or until golden in colour. 

What I like about this cookie is, it’s more than just a cookie. It has this chewy center and yet the exterior has some crunch. A great cookie for anytime of the day to snack on with all the healthy ingredients it offers.

      Thank you so much! They are such a delicious cookie and they are sweetened with coconut sugar, and shredded coconut. Also, with a natural sweetness of maple syrup, so no refined sugar added.
